Ok guys... I just HAD to share this with you all!! As most of you know I am hooked on the rice papers/spring rolls. You also know that my ds is more limited in his diet than just being GF, so we were trying to come up with a safe desert for Thanksgiving that EVERYONE in our family can eat... We've found it!
I wish I had exact measurements, but this was purely an experiament, you may need to prefect it to meet your needs.
We tried two versions... baked and deep fried (I am not a deep frying type person!) But the deep frying won hands down! The baked was very chewy and hard to eat, the fried was crispy and very tasty!(I will list both versions)
For our test run, we used one macintosh (sp?) apple, medium size (and made a total of 4 "apple wraps" one baked and 3 fried)
rounded tsp of Potato starch flour
drop of lemon juice
1 tsp sugar
cinnamon
Directions:
peel and core baking apple(s) slice thin
put apples, sugar, and potato starch flour in bowl.... toss
add lemon juice
sprinkle desired amount of cinnamon, toss again
place in fridge until rice paper is ready
Wet both sides of rice paper
when soft, scoop out desired amount of apple mixture, place on far side of rice paper, roll and tuck edges while rolling
preferred method:
place apple roll in hot grease (I only had canola on hand) watch closely, they brown quickly, remove from heat when brown and cool
method two:
brush butter/margarine and sprinkle outside of roll with cinnamon bake in oven until golden brown @ 350 degrees

Here are some good measurements for a stuffing. This is my apple pie filling and should do nicely...
3/4 Cup Sugar (1 Cup if apples are really tart)
3/4 Teaspoon Ground Cinnamon
1/4 Teaspoon Ground Nutmeg
1 Teaspoon Lemon Zest
1/2 Cup Butter (1 Stick)
1 1/2 Teaspoon Vanilla
2 1/2 Teaspoons Lemon Juice
4 Tablespoons Corn Starch
8 Granny Smith Apples
Combine in a small bowl: sugar, cinnamon, nutmeg and lemon zest. Mix. Add melted butter and vanilla. In a separate bowl combine lemon juice and cornstarch until thick and lump free. Mix with first bowl. Set aside. Peel apples and cut into small wedges. Combine with sugar spice mixture.
If you're making pie:
Prepare crust according to directions. Fill with apple mixture and attach upper crust to lower. Crimp edges to seal and vent top. Coat top with egg wash and bake at 350 degrees for 1 1/4 hours until golden brown. _________________ Cheers!
