My sister gave me a recipe for Blender Batter Waffles that she got off of www.suegregg.com and I have made some changes. this is my version:
2 c. brown rice flour
1 c. buttermilk or sour milk (milk and vinegar)
2 T. oil
1 t. vanilla extract (or your favorite - I've used maple, almond, and walnut)
1 t. salt
Mix the above. Add some water if it is too thick or too dry. Then add:
2 eggs (I tried 1 egg and 1 T egg replacer, but the waffles weren't as fluffy)
1 t. baking powder
1/2 t. baking soda
Mix well. Preheat waffle iron. Oil it WELL and as often as needed while making the waffles.
I 4x the recipe and freeze the waffles individually. I pull them out of the freezer as needed, defrost in microwave, then pop in the toaster. They are really fabulous!! _________________
