I like to keep this mix on hand for weeknight dinner emergencies. It takes only a few minutes to prepare if you mix up the dry ingredients ahead of time.
Dry mix
1 cup cornmeal
1/2 cup cornstarch
1/2 cup brown rice flour
1/4 cup sugar
1 teaspoon xanthan gum
1 teaspoon salt
1 tablepoon baking powder
1/4 cup powdered milk (I use non-instant)
Combine all ingredients in an airtight container.
To make muffins
Preheat oven to 400 degrees. Dump mix into a large bowl. Add 2 eggs, 1 cup water and 1/4 cup oil. Mix well. Grease muffin cups. Fill 3/4 full. Bake 18 minutes or until done. Makes 12 muffins. _________________ -Colleen

Could you use white rice flour in place of the brown rice flour? Just curious, as I have a hankering for corn bread and don't want to go to the store unless I have to.

White rice will work fine. I used to use white rice flour in this recipe, but I have switched over to brown rice. Hope you like it! _________________ -Colleen

You'll get better nutritional value from brown rice from the bran of the hull that is still intact. Extra fiber is always good!! _________________ Al

It works for an 8x8 pan, but you will have to increase the baking time for about 5 minutes or so. I did that this weekend, in fact!  _________________ -Colleen
