I like to keep this mix on hand for weeknight dinner emergencies. It takes only a few minutes to prepare if you mix up the dry ingredients ahead of time.

Dry mix
1 cup cornmeal
1/2 cup cornstarch
1/2 cup brown rice flour
1/4 cup sugar
1 teaspoon xanthan gum
1 teaspoon salt
1 tablepoon baking powder
1/4 cup powdered milk (I use non-instant)

Combine all ingredients in an airtight container.

To make muffins
Preheat oven to 400 degrees. Dump mix into a large bowl. Add 2 eggs, 1 cup water and 1/4 cup oil. Mix well. Grease muffin cups. Fill 3/4 full. Bake 18 minutes or until done. Makes 12 muffins.

Could you use white rice flour in place of the brown rice flour? Just curious, as I have a hankering for corn bread and don't want to go to the store unless I have to.

White rice will work fine. I used to use white rice flour in this recipe, but I have switched over to brown rice. Hope you like it!

You'll get better nutritional value from brown rice from the bran of the hull that is still intact. Extra fiber is always good!!

Can I use this mix to make corn brad and if so what size pan would I use to bake it in.

It works for an 8x8 pan, but you will have to increase the baking time for about 5 minutes or so. I did that this weekend, in fact! Very Happy
