Especially where it's still good as leftovers.
Mine is green beans and new potatoes. Big pot of those and I can eat on it for days. Mmmm.

I actually prefer my veggies uncooked. There's only a handful of cooked veggies I like. I think I'm weird like that.  _________________ Ostrich :>--O==={

| Lili beans are my favorite by far! It's long beans (or green beans) sauteed with way too much garlic and a bit of oil. Then they're simmered in some water until tender-enough. Once the water is almost gone add tamari, sriracha chili sauce to taste, a bit of sugar and saute for a few minutes. I could eat them daily! |

Sauteed in garlic with salt or even a bit of garlic salt. Can't have too much garlic, eh ? With all my "can't haves" in my diet, this is simple and easy. The best is to slowly sautee minced garlic on low for, oh, about 10 minutes, then add your veggies. Great for green beans, collard greens, brussel sprouts, asparagus, etc...

Steamed broccoli with vinegar on top is my fave. Steamed cauliflower with butter and salt is nice too. _________________ Sarah |

We eat mostly steamed with various herbs on top. Cauliflower and broccoli are great steamed with a touch of butter and a ton of garlic! Grean beans with bacon.  _________________

with garlic, olive oil, balsamic v., lemon, lime [any single or combination of said items ]
I like my veggies to be al dente'. I like a little crunch or crisp to them. Nothin' worse than a soggy cooked veggie <GACK>. I'm kinda like Os on the raw veggie thing. _________________ Al

The only place soggy vegetables belong is in the compost heap!
You can use either powdered or fresh garlic - whatever you prefer. I keep both on hand all the time.
Another great thing to use is garlic-infused olive oil. Fist thing in the morning crush fresh garlic, put it in a glass container, pour some olive oil over it to cover and then about a T or so more. Put it in the fridge and that evening you will have a great flavored olive oil to drizzle on your steak, pasta, chicken, or veggies!
Last week I was in the process of making whipped potatoes for dinner when I realized i had no butter or margarine for them. So I used a bit of left over bacon drippings, garlic, and milk. Everyone raved about the potaotes and said they were the best EVER. Of course, I would not want to do that every week with the drippings because I don't think it is healthy. I think garlic in mashed potatoes is essential. They are also great if you boil an onion or two in the spuds and mash the onion up with the taters.  _________________

Great garlic infused oil idea, thanks for that one. And I would have never thought of the onions cooking with the potatoes, but since you said to mash them in, then what better way to really incorporate the flavor than boiling them along. I find that if I even use the same cutting knife for something after I cut the onion, it took on the flavor and I then realize that I have used the same knife when I taste it  _________________ Sarah |

I'm all for using herbs and veggies to season things. I grew up in a home where the cooking was VERY bland. I never knew what garlic really was until I met my husband. My parents talked about garlic like it was a bad thing!
In the last 14 years I have learned that seasoning food is OK! It does not have to be bland! Now I pack our meals with as much flavor as possible - naturally, though! NO MSG!!  _________________

oh, and another idea about veggies - don't be afraid to try herbs you are not used to. tarragon is fabulous with certain veggies. Or use curry for an oriental flare.
I have 5 children and they all love steamed veggies. Of course, they like some more than others, but I think if they are seasoned appropriately and presented in an appealing way, that is half the battle.
I, too, like my veggies raw, but I cannot digest them, so raw veggies are my forbidden fruit!

I like em cooked, but crisp. Nothing mushy. Yick.
I think grilling is my favorite way to eat veggies. Spritz with a little olive oil and throw on the rack. How easy is that? I love sliced summer squash that way. Corn on the cob is delightful in the summer with BBQ fair too. For winter eats, steamed is best.
We traditionally have a ham for Christmas dinner. With it we always have mashed potatoes (I hadn't thought of the onion - we usually throw in 3-4 cloves of garlic and mash with the taters though. I'll have to give the onion a try) and Christmas beans. I love Christmas Beans... for the recipe, see below...
Christmas Beans - Par boil green beans, drain. In a pan with butter and minced garlic saute sliver sliced almonds and red bell pepper. Add in green beans and saute with a teaspoon or two of honey to coat. Salt to taste.
It's a very color appropriate veggie for the season and it's spicy with the garlic and just a bit of sweetness to balance it out with the honey. YUM!

Stir fried with olive oil and garlic, especially snow peas or pea pods and definetly not squishy.

Yes, I have, but I was still literally doubled over in pain. Steamed is ok with me because I love veggies and I'm glad there is a way I can eat them.  _________________
