Brown Rice Flour Mix

6 c. brown rice flour
2 c. potato starch
1 c. tapioca starch

Chocolate Walnut Bars

Crust:

1 1/2 c. GF brown rice flour mix
1/2 c. butter or margarine, softened
1/4 c. packed brown sugar

Mix all until crumbly. Press into a greased 9x13" baking dish. Bake in a preheated 350* oven for 12 - 15 minutes or until lightly browned.

Filling: (make while crust is baking)

3 eggs
3/4 c. granulated sugar
3/4 c. light corn syrup
2 T. butter or margarine, melted (or you can use oil)
1 t. vanilla
1 t. xanthan gum (opt.)
2 cups chocolate chips
1 1/2 c. chopped walnuts

Beat eggs, sugar, corn syrup, butter, vanilla, and xanthan gum. Stir in chocolate chips and nuts. Pour over baked crust. Bake 350* for 25 - 30 minutes, or until set. Cool. Chill, and cut into bars.

This is VERY sweet and has the consistency of pecan pie. If you used pecans and left out the walnuts and chocolate chips, it would be pecan pie bars.

This was VERY simple to make and did not take long to mix up.
