GF CHOCOLATE CHUNK OATMEAL COOKIES
Ingredients
1 1/2 cups Authentic Food's Multi-Blend Gluten Free-Flour
1 teaspoon ground cinnamon
1 teaspoon freshly grated nutmeg
1 teaspoon ground ginger
a pinch ground cloves
a pinch cayenne
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon xanthan gum
2 sticks (1 cup) unsalted butter, softened
1 cup packed brown sugar
1 cup granulated sugar
1 large egg
1 teaspoon vanilla
3 cups GF Oats
4 oz. high quality chocolate bar chopped into 1/4" chunks*
*I used Dagoba's Xocolatl Dark Chocolate Bar to add a bit of kick to my cookies. But any kind of chocolate you prefer would work just fine.
Directions
Preheat oven to 375°F.
Into a bowl sift together flour, spices, baking soda, salt and xanthan gum. In a large bowl with an electric mixer beat butter and sugars until light and fluffy and beat in egg and vanilla. Add flour mixture and slowly beat until just combined well. Stir in rolled oats and chocolate (dough will be stiff).
Working in batches, using a level ice cream scoop drop dough about 2 inches apart onto an ungreased baking sheet. Press top with a fork and bake in middle of oven until golden, 10 to 12 minutes. Cool cookies on baking sheet 1 minute and transfer to racks to cool completely.
Makes about 30 cookies. _________________ Cheers!

You finally took the plunge and tried your GF oats??? This looks like a good recipe. Can you taste the cayenne very much? _________________ -Colleen

I put in really, just a dash - it's not overwhelming in anyway and since I had the xocolatl chocolate that also has chilies it, it's complimentary. I'm sure you could easily leave it out if it doesn't appeal to your pallet. I like to mix it up a bit so this was fun for me... but you could leave it out and use plain chocolate for a more traditional cookie. Yummy either way! _________________ Cheers!

My daughter has this toy and plays with it all day long:
and when you push the cookie monster button he sings, "C is for cookies, that's good enough for me - Yum, yum, yum, yum, yum" Which is her favorite button, so the whole time I was making these cookies that little song was going though my head. What about making GF oatmeal cookies with GF oat flour? I was thinking one could make your own flour by grinding up GF oats. Then, would it give it the properties to be sticky like gluten? I couldn't find a recipe for cookies with oat flour, but I would like to try.

I have not tried the Oat flour in cookies per se, but I did make some Biscotti a couple years back using a combination of quick-oats, oat-flour, and even steel-cut oats (but, I couldn't find the Steel Cut ones certified-GF, and thus I have not tried since).
I would guess it would work just fine.
My mother has an oat-flour chocolate cake recipe that is pretty decent, so if it works for cakes, it surely should work for cookies. _________________ Mike

Thanks Mike! Maybe you could play with the recipe to make it without xanthan gum?
I've also made them chocolate free and they're good that way too.
You could easily sub 1 cup of raisins for the chocolate for a healthier option.
But I'm thinking the next time I make them I'll add in cranberries and maybe some orange zest. Once I get it right I'll post an alternative to this recipe. _________________ Cheers!

Martha Stweart made some really tasty looking cookies on her show today with oatmeal and dried cherries. It wasn't a GF recipe of course, but it looked soooo good! I may use your recipe and adapt it to use dried cherries. That way I can call it a fruit serving and pass them off as a health food!  _________________ -Colleen

I'll give it a try. Shouldn't be too tough, especially since you harldy have that much gum in there to begin with. Maybe yours would work fine just leaving it out? I have the recipe queued up behind my grandmother's (adapted) Oatmeal cookies I have planned to make for months. I guess I need to get busy baking!
The weather has been so nice in Cleveland this winter that I have not spent as much time in the kitchen as I would have expected. This week is supposed to finally usher in winter weather. If so, I am bound to be more productive  _________________ Mike
