Inspired by a GFP mix dying a slow death in my pantry, I used the directions on the package and a recipe in The Cake Mix Doctor to turn out some tasty yellow cupcakes. They'll be perfect topped with a rich chocolate buttercream frosting.

Edited to add that this recipe was formulated (read:cut in half) for a mix that makes 1 8-inch cake.


Pantry Thinning Yellow Cupcakes


1 GFP Old Fashioned Cake and Cookie Mix
2 ounces instant vanilla pudding
1/4 cup canola oil
2 eggs, lightly beaten
3/4 cup buttermilk or 3/4 milk combined with 2 1/2 teaspoons lemon juice left to sit for 5 minutes
1 teaspoon vanilla

Preheat oven to 350 degrees F.

In a bowl add all ingredients and mix with an electric mixer until combined. Scrape side of bowl and mix until smooth or mostly smooth.

Fill cupcake papers 2/3 of the way full. Bake for 18-20 minutes or until the cupcakes are golden and leave no indentation when the top is touched.

Makes 18 cupcakes.

I made these on Sunday. There were great on Sunday, good on Tuesday and fair today. The one I had today was a bit hard/firm. If I get another of these mixes I'll make them the day I want to eat them try not to have leftovers.

I made this recipe today, but I used the Glutino yellow cake mix instead of the GFP one because that's what I had. It vastly improved the cake over the instructions on the box.

Glad you like them. The Cake Mix Doctor book is a gluten-free cake mix' (or mixes?) best friend.
