I drove in from Houston on Thursday a 3 hour drive after working out at the gym. I get to Austin, my DIL & I took the three kids to the new Whole Foods downtown. We left at 4:45p.m. and it took us 1 & a half hours to get there - there was three wrecks on the way!!!!! So we walk into Whole Foods right in the bakery section with three starving kids - & we had not eaten either!!!! The place was very huge & confusing with lines & food stations every where. Of course we ended up with three crying kids. We quickly got to the gummy candy section & let them have some candy. We all loved the Whole Foods brand of cheetos - we were eating on two bags of those as I threw 4 more bags in the cart. We ended up back at the food court, finding the kids some rice & beans & one kid had a salad bowl. I checked out & took everything to the car while they ate. We loaded up on pasta, cereal, & mixes for brownies & pancakes & some flours & almond meal. I was very happy with the choices that we made.
We got on of the whole foods GF cherry pies - DIL liked it - but I did not - I am very picky. I think I can make better. Plus it was a tiny little thing for like $7.00, yikes. Gina made hotcakes out of the brown rice gluten free pantry mix - I did not really like them that much. The kids thought they tasted different, although thye did eat some of them. We are going to make our own pancake recipe for tomorrow morning. We also got some of the biscuits - I have not tasted it yet - but Gina said they were good, especailly toasted.
They had a birthday party to go to today - the kids were decorating cupcakes. So I made my first batch of cup cakes (chocolate) & they turned out fabulous - the kids wolfed them down, I even ate half of one & it was good. Except that I did not much like the rice flour in it - I could taste a tiny bit of grit - so I am going to make them again tomorrow & use another flour instead of the rice flour. Today I used the rice four, tapioca flour, & potato flour. I tweeked the recipe that was in a GF cookbook to suit me. I will tweek it again tomorrow then I will post the new one if it turns out good again. I was very proud of our kids at the party there were rice krispy treats with their names on them for a paper sail & the kids never even asked if they could eat them!!!! & they served Blue Bell Vanilla ice cream in individual containers. We were safe there!!
I took my grandsons lunch to him on Friday & he wolfed down everything!!! He loved the pizzas made out of tortillas. I took a Mission White corn tortilla buttered one side & put it in a skillet then I put a slice of cheese on it & then another tortilla & buttered the top, I flipped it over to sorta make both sides a little toasty - then I put prego pasta sauce on it & then grated some cheese over that & slid them in the over to melt the cheese & cook a minute. They were really good & he ate a whole one! With some tator tots & then he ate two whole scoops of ice cream that I took. I am taking his lunch again on Monday & Tuesday- just to get him started - then grandmother will be going home!
For dinner my son is cooking us orange chicken - which is gluten free. He batters the chicken in corn starch. Of course he was not happy with breakfast this morning & went to McDonalds & got pancakes & ate them in front of the kids - but they are used to him eating different stuff & did not say anything - The kids have really been good & have been trying different things. Gina took them to the pool this afternoon as a reward & I made a WalMart run & got all kinds of goodies for them!!! (& me)
Al, guess I will check your pancake recipe before I get off here.
Thank you everyone for your support for Gina. She is doing really good. She even thinks she feels better today!!! |

WOW - What an adventure!!!
It sounds like things are going well. Now, if you can get your Son to comply. Hmmm how bad did he want that lens?? hehehehe
Be careful of the Tater Tots - OreIda brand is not classified as GF (the last I knew). By the ingredients - it looks OK, but the company does not list them as GF. Better safe than sorry
For those just starting out...Rice Krispys (as most mainsteam rice/corn cereal) have malt in them and are not GF.
The pancake recipe is here (at my house) not here (on the board)...sorry about that...I didn't explain it that well. I will post it tho. It's a bit late now. It's a buckwheat recipe. I liked them and I am not a big pancake eater (too many growing up ) Pamela's Pancake Mix is really good too!!

Wow ladies,
That is exciting that you are doing so well, cooking and all. Thanks for sharing the recipes. Yes, Pamela's pancakes are the best. I'd eat them even if I wasn't GF. They have so much more taste than wheat. Watch the temp as they seem to burn easily.
