Creamy Polenta with Fresh Corn
1 1/2 t salt
2 ears fresh corn, kernels removed (or 2 C frozen, thawed)
2 C milk
1 C quick-cooking polenta (yellow cornmeal)
4 t butter
1/4 t ground pepper, more to taste
Pour 2 C water into a medium saucepan. Add the salt, corn and milk. Set over high heat, and bring to a boil. In a steady stream, slowly pour in the polenta, stirring constantly. Reduce heat to low simmer, stirring often, until polenta is very thick, 4-6 minutes. Stir in butter and pepper. Serve warm.
Serves 4 |

Hey TEC,
I saw your other polenta recipe and just had a quick question:
For this recipe with the fresh corn, do you also use the Arrowhead Mills Corn Meal? I'm just curious because I have been absolutely CRAVING polenta lately (I love the stuff!), and now that I have a functional kitchen, I definitely want to make some!!

| Yep, I use Arrowhead Mills Organic Yellow Corn Meal for both. Actually for everything that calls for corn meal. |
