No, they are not as fragile. I only broke about 5 or 6 compared to the dozen I usually break. Part of that is due to the fact that I rolled them thicker. I think the dough was much easier to work with-a bit dryer and not so sticky.
They are still a bit dryer after baking than my NGF version. (as Al has said my goal is always to make things as close to NGF as possible) The next time I make them I may have to try adding back in some of the potato starch as I believe that holds in the moisture, but that probably won't be until next Christmas!

Ok- this is probably the stupidest question ever...but I've never iced a cookie in my life. I've never been good at cookies, but these look so great I want to try them. So, do I just make regular vanilla icing? I was at target today and saw cookie decorating icing- the ingredients looked fine but wasn't sure what people use. Hey Rach, you know the rules around here - there's no such thing as a dumb question
We use a Butter Creme frosting. I haven't a clue what commercial frosting is GF. I apologize if you have issues with dairy
This frosting does get hard enough so that you can stack the cookies.
4 cups powdered sugar
1/4 cup butter, softened
1/4 cup solid vegetable shortening
1/4 cup milk
1 teaspoon vanilla extract
1/4 teaspoon almond extract [optional - neither one of us like the almond flavoring]
Food coloring [optional]
In a small mixer bowl at low speed, beat powdered sugar, butter, shortening, milk vanilla and almond extract until blended.
At medium high speed beat until light and fluffy. If desired beat in food color a drop at a time.
Leftover frosting can be kept refrigerated in a covered container for several weeks.
Makes about 2 3/4 cups. _________________ Al

Peg said you have to let them dry for a couple of hours. You can tell by touching [or eating ] them. _________________ Al

I am not sure how the frosting freezes. I freeze them unfrosted and frost as I need them. I would experiment with a few before frosting and freezing a big batch of them.

Thanks! I actually tried a batch tonight and I'm so impressed! I've never been that good at making cookies but these were perfect and taste totally normal! I couldn't believe it(despite all the praise of the recipe)!
I will freeze them plain- thanks. Hopefully that means I won't eat them all. I'm actually not a big frosting person- and I really like them plain. I'll decorate the ones to bring to work. _________________ Rachel |

You guys are funny! My daughter gets confused about eating cold pizza and frozen pizza. Sometimes as we are pulling out a frozen pizza to bake, she will say, UM, NO Mom I like my Pizza cold! I then have to remind her, if it hasn't ever been baked it is a Pizza Popsickle, not cold!  |

My kids love to eat frozen, grated cheese and frozen peas. I grow 'em wierd, that's for sure.
Huh? You wanted this thread to stay on topic? OK then. I made a triple batch of this dough last week for baking cookies for the holidays. I will be baking some for the kids in our support group to frost at our next meeting, too. _________________ -Colleen
