Brownies

Note: This recipe is free of wheat, gluten, dairy, casein, and eggs.
Note: Recipe from Babycakes NYC

1/2 cup canola oil, plus more for pans
3/4 cup plus 2 tablespoons garbanzo and fava bean flour
1/4 cup potato starch
2 tablespoons arrowroot
1/2 cup cocoa powder
1 cup unrefined sugar or 10 tablespoons plus 2 teaspoons agave nectar
2 1/4 teaspoons baking soda
1/4 teaspoon xanthan gum
1 teaspoon salt
1/2 cup store-bought unsweetened applesauce
2 tablespoons pure vanilla extract
2 cups vegan gluten-free chocolate chips, such as Tropical Source
1/2 cup brewed coffee or hot water

Preheat oven to 325°. Brush mini-muffin pans with oil and set aside.

In a medium bowl, whisk together dry ingredients.
In another bowl, combine applesauce, canola oil, and vanilla.
Slowly add dry ingredients, stirring to combine. Stir in water or coffee until it forms a batter.
Fold in chocolate chips.
Drop 1 tablespoon of batter into each prepared muffin cup.
Bake until a toothpick inserted into the centre comes out clean - about 12 to 15 minutes.
Cool before removing from pans.

Linda's notes:
These tasted like brownies, but did NOT come out of the mini muffin tins very well, so they looked awful. I used Pam on the pans, not real canola.
I didn't have arrowroot, so I substituted tapioca starch (I think). I used granulated sugar, homemade applesauce and Hershey's Chipits and water not coffee.

I got the recipe from this website. Mine didn't look like the picture though. (I don't know how to say "this" website and have "this" be the link. Tips?)

Hey Linda! Great recipe find! One ingredient is missing above, though. There should also be 1/2 cup cocoa powder with the dry ingredients. I found this recipe on Martha's page and double checked it to be sure. Mine came out of the pans OK. Would it be heresy to say that I think these are just as good as GFP brownies???

Put me down for a TNT for this baby. I have a tummy ache now because I inhaled a whole bunch of these this morning.

OOOPS! Thanks Colleen, I'll edit that cocoa powder in. How the heck did you get them to come out so nicely? Mine were a mess. Not worthy of space on my CompactFlash card.
How long did you let them cool before you took them out of the pan? They look delish!

I sprayed my mini-muffin pans with Pam, and I had no problem getting them out. Maybe it's because my pans are new, though, and this is the first time I've used them. They had a good sale on nice Wilton pans at Wal-mart so I picked up a few. I didn't time how long they cooled, I just did other things until they were completely cool. I also forgot to add that I got 4 dozen mini-brownies out of this recipe.

This one is defintetely a keeper.

I had to share that I got the best compliment about these little brownie bites yesterday. I made up a batch to take to the family Mother's day event. These pretty much got devoured, and my SIL turned to me and said "you make the best treats." No mention of them being GF treats, just being great on their own merits.

But I have to confess I took all the credit. Was that wrong??? Very Happy

Can you tell I love this recipe? Very Happy I made these to take to a Boy Scout potluck this week. After the plate was COMPLETELY EMPTIED, I heard one of the scouts go back for more, and he said "Awww! All the brownies are gone. And I only got 5!" Guess you can say these passed the kid test with flying colors.
