No joke, these babies are a lot of work and make a lot of mess, but it is worth it. I soaked the rice wrappers in a pie plate with warm water for a few minutes to make them pliable. Resist the urge to over-fill them. I think the recipe made 25 or 30 rolls. I stopped counting after a while.
2 ounces bean threads
4 eggs, scrambled
1 onion, finely chopped
3/4 (4 ounce) can small shrimp, drained and chopped
1 pound lean ground pork, cooked and drained
2 tablespoons vegetable oil
1 carrot, shredded
2 ounces crabmeat
3 ounces bean sprouts
2 pinches ground black pepper
1 tablespoon GF soy sauce
3 tablespoons GF fish sauce
1 clove garlic, chopped
20 - 30 rice wrappers (6.5 inch diameter)
1 quart oil for deep frying
DIRECTIONS
Soak the vermicelli 30 minutes in warm water; drain.
In a large bowl, mix the vermicelli, scrambled eggs, onion, shrimp, pork, vegetable oil, carrot, crabmeat, bean sprouts, pepper, soy sauce, fish sauce and garlic.
One by one, moisten the rice wrappers in water and fill with 2 to 3 tablespoons of the vermicelli mixture. Roll the wrappers, and allow them to set for 30 minutes.
In a large saucepan, heat the oil to 375 degrees F (190 degrees C).
Fry the spring rolls one or two at a time until golden brown, about 3 minutes. Drain on paper towels. _________________ -Colleen

Where do you find rice wrappers?
I have no Asian or specialty markets nearby. The health food store doesn't carry them. None of our local supermarkets have them.
Perhaps there is a website where I can order them. I have looked, but haven't found one yet. Any advice would be appreciated.
I made my own noodle dough the last time I made egg rolls and fried chicken dumplings. (Talk about work! but they sure were good!)
Another question - I would like to try to use these wrappers (if I can find them) to make sushi (with veggies and cooked chicken - I'm not a big fan of fish) because I just can't get around the taste of the nori. Would they work for that use, or do they need to be cooked after they are soaked? |

We are spoiled in the Seattle area becaue we are loaded with asian markets. Any well-stocked grocery store with an asian section should sell them. If you can't find them anywhere, I searched on Amazon, and it looks like you can get them there.
Rice papers can definitely be eaten uncooked. Vietnamese Summer rolls are eaten this way. Spring rolls are fried, summer rolls are uncooked. _________________ -Colleen

You sure are!! Have you been to Davinci's on Greenwood Ave? My fiance and I go there at least twice when we're in Seattle visiting his dad. I think I gain 5 - 10 pounds every trip! If you haven't been there yet, you should go. They had pizza in December. PIZZA in a restaurant. (I got that twice...)
Ok. Drooling now and wanting to register at Davinci's for my wedding this summer. (Is that bad???)
Thanks for the spring roll recipe. My fiance has been experimenting with Chinese at home since the closest PF Chang's is about an hour away in downtown Boston.
