Hi All -

A friend of mine told me tht a friend of hers who has celic was told by her doctor that she should avoid anything saying emulsifier. But I'd never heard that before... any ideas if there is truth in this?

An emulsifier is simply something that allows 2 dissimilar items to stay mixed. You know how an oil and vinegar salad dressing separates? An emulsifier would stop that from happening. Soy lecithin is one example. Unless the emulsifier is made from a gluten grain (I have never heard of one that is), there should be no reason to avoid them.

Honestly - where do these doctors get their information from?

On the other hand... here is some real evidence to the contrary... From the Celiac Sprue Association:

Emulsifiers - Emulsifiers alter the surface properties of other ingredients they contact; emulsifiers may contain gluten from grain.

This web site also says that Malto Dextrin is OK but Malto Dextrose is not.... I'm getting confused...
