| Yes, I'm okay. I'm 1000 times better now than I was Sunday night or yesterday AM. Seems if I had a case of food poisoning or the stomach flu. I'm not sure I'll ever be able to eat lychee fruit again though...bought some at TJs and peeled at ate them without washing while driving home. Thanks for asking. |

I had that once a loooong time ago. I think it was from under cooked bacon at a Village Inn. You're right, I wouldn't wish it on anyone. Glad you're feeling better! _________________ Ostrich :>--O==={

Glad you are feeling better, TEC!
My husband is doing all the cooking now that I'm working. He's a great cook. He always has homemade salsa in the fridge for snacking with chips. For some strange reason, my sons like it on their hotdogs. BLECH!
He's been grilling steak, hot dogs, hamburgers, pork chops, and chicken. We have taco salad once a week (I eat mine minus the raw veggies, but it is still good with the homemade salsa).
Several times a week, I come home too tired to eat, so in the late evening I have some kettle-popped corn with some garlic and salt on it. No butter. Yummy!
We have also been enjoying fresh corn on the cob, green beans, and the kids are eating lots of watermelon.  |

| Today I officially got my cooking groove back! Tonight for dinner I'm having and sharing with some neighbors a few different Indian dishes. I made chicken tikka masala, chana masala, basmati rice with saffron and cardamom & mango lassi. If my foot quits hurting after this short break I'll whip up a quick cucumber raita. I had forgotten how quickly Indian dishes come together. The hardest part is finding the myriad of spices in my spice cabinet. |

Lunch today was yummy: heated Mission corn tortillas with homemade hummus, Applegate Farms sliced chicken breast, lettuce and tomato. Simple = good and fast
TEC - When are ya coming over to cook for me? I might learn something! I'm sure I'd enjoy anything you'd make. You sure are versatile, girl.  _________________ Nance

Versatile! Must be due to my self-imposed rule on eating out and love of all foods ethnic. I'll come cook with you anytime! I think we would have fun together. |

Mmmmmm BBQ pork sandwiches...
We had a pork roast on Sunday for dinner [yumm-o!] with mashed red tatters and fresh green beans.
With the leftover pork I made BBQ pork with SBR [Sweet Baby Ray's]. This is the 3rd and final meal from this little piggy. For those that are about to Oink, I salute you! _________________ Al

Man, you guys make some amazing stuff. Tonight, after doing several loads of laundry, I'll be making the ever-popular Mrs. Leepers chicken alfredo.

Al,
My son and husband got back a few weeks ago from Alaska. They caught and brought back over 100 lbs of fresh river King Salmon. It's wonderful!!
Sorry, you don't live closer, we could invite you over for a barbeque!  |

For my best attempt in trying to adjust to a whole new way of eating, for lunch today, I've made something I've never tried before..
Quinoa Pilaf. We've used Quinoa many times before in cooking or more often as a hot cereal. However, because I can no longer have rice, I thought I'd try the Quinoa.
I cooked the grain as directed and sauted chopped carrots, diced green onion, chopped zucchini, and chopped celery. If I had it on hand, I would have added fresh garlic, but I am fresh out
I was quite surprised not only that this was the 1st thing I have had to eat that didn't make me sick in many months, but also that I really liked it! _________________ Kristie M.
