I'm feeling uninspired when it comes to dinner lately so thought I might get some good ideas from you. Thankfully, I'm inspired when it comes to baking, but that's not going to help the 6 chicken thigh/leg quarters from spoiling in the refrigerator.

Tonight I had an sandwich from some leftover roasted chicken with some awesome tomatoes from the farm stand.

So, what's been cooking at your house?

Hmmmm, tonight I'm having left over grilled salmon that I made Tuesday night. On my BDay, we stopped at a Penzy's spice store. We had picked up a French Vinaigrette mixture. I made up a batch and poured some on the wild salmon and poured some on a mix of chopped broccoli, onion, carrot, zucchini [skeeni as my FIL says], tossed the mixture in some tin foil and grilled it.

Not sure what else is lurking in the fridge. Sure wish I had some of those veggies now.

Better go catch that salmon...

What's cookin'? Very Happy Anything leftover from 4 days in Steamboat Springs with DH and the kids. I ate "in" the whole time (condo=nice choice), and brought a laundry basket and two coolers full of: corn tortillas, chicken, ground beef, veggies, yogurt, berries and other fruit, staples, GF beer, wine, tequila and GF snacks. Once the leftovers are gone, I'll go shopping and buy anything *but* what I've eaten for the last week.

I broiled the skinless chicken breasts - coated in olive oil, minced (not crushed) garlic, and chopped jalapeno peppers. Great with Lundberg's wild rice mix and a salad, and as leftovers, in tortillas with black beans, salsa and lettuce.

Pretty boring!

Teryaki beef skewers on the grill and corn on the cob! Teryaki = GF soy sauce, sugar, water, garlic, ginger, and a bit of liquid smoke. At least, that was the last major meal at my place. It's been leftovers ever since (GF pizza and PF Chang's). I'm going to try stir frying the rest of the beef with some rice. Next week is Mrs. Leepers, breakfast for dinner (GF waffles for me), and chicken fried rice.

Seems like leftover disease is spreading like rampant.

We've finally gotten a break from the heat and humidity so I'm going to fix a fall meal--chicken paprikas, locally grown potatoes and cucumber salad--at GF Grandma's house.

Did you really catch the salmon? Have you heard about BP given permission to dump an extra 35 (don't quote me on the number)% of amonia and sludge into the lake on a daily basis? Permission was granted by Indiana so BP could expand and create 80 new jobs. The whole thing disgusts me.

I haven't decided yet. DH will be back tomorrow night, so we'll probably go out to eat. Tonight I'm eating with my family.

We love summer food!
Yes, corn on the cob is plentiful right now. Still waiting on tomatoes and cucumbers from the garden. -- Can't wait to cut those up with some ranch dressing! Probably just had our last batch of Dutch mess as it's too hot for the lettuce to grow back now.
The other day I took a pork roast and stuck it in the crockpot with a can of coke and some GF Pantry onion soup mix and let it cook all day. Then pulled it apart and put some Sweet Baby Rays bbq sauce on it. It was very yummy.
Lots of watermelon and cantelope.... and of course salads.

Yesterday we had round steak and red potatoes on the grill. I had green beans and DH had a big salad.

I tried red potatoes for the first time a few weeks ago and I'm not having any kind of reaction to them. Very Happy Yea! So we have been eating those a couple times a week.

Let's see, tonight we are having shrimp, fresh green beans and garlic sauted together and wrapped in spring roll wrappers there will be a tomato salsa on the side that contains fresh tomatoes, bell peppers, garlic and onion and fresh parsley. We will also have brown rice and some type of fresh fruit

last night we had Bratwurst cooked on the grill with bbq sauce, black rice, mixed vegetables and strawberries

Wed: grilled chicken salad with "good lettuce...spring mix", grilled chicken, cucumbers, homegrown tomatoes, sliced boiled egg. sesame seeds, celery, chebe bread sticks sprinkled with sesame seeds and watermelon for dessert

Tues: we had homemade pizza using chebe bread for Ina...she is allergic to cheese so her pizza contained leftover steak, bell peppers, garlic and onions sauted in evoo

Monday: we had Hamburgers cooked on the grill (Ina ate hers without the bun at her request...she needs braces and hamburger buns are difficult with her overbite lol), boiled new potatoes, fresh green beans and a salad with cherry tomatoes and cucumbers

It seems that around here, we eat mostly chicken. Tonight it's Chicken Parmesan (hold the parmesan for DS)

Our two favorite chicken dishes are Chicken Creole (adapted from my best friends recipe for Shrimp Creole) served up with rice.

And Chicken Alfredo served over Tinkyada Fettucini along with steamed fresh broccoli

Summer has its hold a bit on us here too.. last night it was hamburgers and homemade fries.

Tomorrow it's Tacos

Tonight we had Tuna [and pasta] Salad. I also had to have some hotdogs. Kind of weird food pairing, but I had a hankerin' for 'em.

Tomorrow for lunch...Pork Roast, Baby Red Potatoes [mashed], fresh green beans. Can't wait. LOL

Last week I called BP and told them that I was boycotting their stations. I once read that each call a manufacturer receives represents 10,000 people. It probably won't make any difference but it makes me feel better...just like my Hershey's boycott.

I can avoid eating LM fish, but that's where my water comes from...drinking, bathing, dishes, etc. Iiick!

Alaska Wild Salmon processed in China...that's an oxymoron if I ever heard one.

Dinner last night: Deby's spagetti and meatballs. I was kid- and husband-less, so took myself out for dinner!

Tonight: pizza on a Deby's crust (thin), with lots of garlic, red & yellow bell pepper, and very thinly sliced white onion. No beer, though Sad


Don't get me started on industrial pollution...arg!

TEC - Steamboat was awesome and very relaxing. Regrettably, no pictures of the food basket.

My meals for the past 1.5 days have been very upscale...frozen Gatorade eaten with a spoon, dry toast and chicken broth (powdered). This afternoon I might get a little more adventurous and add a glass of water to the ensemble.
