I contacted Cabela's about their Hamburger Patty Papers. (you put them between burgers to prevent them from sticking together in the freezer)


They are NOT gluten free.

I never knew they made such a product! If I'm concerned about something freezing together I always use parchment paper cut into the desired shape.

Learn something new everyday.

I wonder if they are dusted with flour so they separate easier.

One point of info - if gluten is used in "packaging" they don't have to declare it on the label. At least that's the last knowledge that I have. If someone knows for sure, I'd like to be up to date on that.

Second what Al said. That doesn't make any sense to me. You have to declare wheat as part of the ingredients. If the product is wheat-free but the packaging isn't, doesn't that mean the product is no longer wheat-free? Which means you can't put "wheat-free" on the label?

I've spent 26 years manufacturing paper and I can't figure out where the gluten comes from. Starch used in paper production is corn, potato, and very occasionally, tapioca. These are industrial starches that are made on dedicated lines by plants that NEVER handle wheat of any kind.

Their might be a surface coating that will be a very complex chemical will inorganic or organic but never wheat related. Dusting with flour would be a nightmare process wise and handling wise. Cheaper and better to use chemistry.

My guess is that when the paper mill was asked the question, the question was translated wrong, the answer was translated wrong, or the right person wasn't asked in the mill. I used to get ingredient questions all the time and some were very, very odd (any feathers in your products?)
