Orange Chicken
Chicken:
3 lb thigh meat chicken, cut into 2" chunks
1/2 cup cornstarch
1/4 cup water
1/4 cup GF soy sauce
1 1/2 tsp minced ginger
1 tsp white pepper
1 1/2 tsp minced garlic
1 egg
Heavy pan or deep fryer
Oil for frying
Sauce:
3 cups water
1/4 cup orange juice
1/2 cup lemon juice
2/3 cup rice vinegar
1/4 cup and 1 tablespoon GF soy sauce
2 tablespoons grated orange zest
2 cups packed brown sugar
1 teaspoon minced fresh ginger root
1 teaspoon minced garlic
1/4 cup chopped green onion
1/2 teaspoon red pepper flakes
1/4 cup and 2 tablespoons cornstarch
1/4 cup water
1. Pour into saucepan 1 1/2 cups water, orange juice, lemon juice, rice vinegar, and soy sauce; and set over medium-high heat. Stir in orange zest, brown sugar, ginger, garlic, and chopped onion. Bring to a boil. Remove from heat, and let cool 10 to 15 minutes.
2. In a separate bowl, mix chicken, soy sauce, and pepper. Stir in egg. Add cornstarch until chicken is coated evenly. Add oil to help separate chicken pieces.
3. Divide chicken in small quantities and deep-fry at 350° until crispy and light brown (do not overcook). Drain on paper towels.
4. Wipe out the skillet, and add the sauce. Bring to a boil over medium-high heat. Mix together cornstarch and 2 tablespoons water, and stir into sauce. Reduce heat to medium low; stir in chicken pieces, and simmer, about 5 minutes, stirring occasionally.
5. Serves 6-8. Serve with white steamed rice.

1. Posted for those of us without a Panda Express.
2. I made this a looong time ago, before I was GF. It's a pretty good recipe. My only suggestion would be to stick with deep frying the chicken. I tried pan cooking it (and using chicken breasts instead of thighs) and it just didn't taste the same. _________________ Ostrich :>--O==={

Os-
DH was away this weekend, so I invited a friend over for dinner. I made this chicken. It was SOOOO good. I've missed Chinese food a lot. DH had some when he got home and loved it as well.
I wanted to be sure I had a really orange-y flavor, so I used oj concentrate instead of regular oj. I would cut a little sugar out if using the concentrate again, although I'm the only one who thought it was a little too sweet. It is definitely going on my "make again" list.
