LEMON CURD

Ingredients:


2 cups granulated sugar
12 large egg yolks, lightly beaten and strained
1 cup lemon juice
1 cup butter, at room temperature
2 tablespoons grated lemon peel

Directions:

Combine sugar and eggs in a medium saucepan, or in a double boiler. Gradually stir in the lemon juice. Cook, stirring, over low heat until the mix coats the back of a spoon (about 175 degrees F.) Do not allow to boil!

Remove from heat and whisk until slightly cooled. Stir in butter, 1 tablespoon at a time. Add lemon peel.

Store in a sterilized jar in the refrigerator.

A lovely, tart spread to have on hand to fill a jelly roll, swirl on top of a muffin, or fill "Thimble Cookies". I also use it, mixed with whipped cream, as a frosting for Angel Food Cake.

I decided to try this recipe last night. We served it with the angel food cake from Gluten Free Baking Classics. It couldn't have been easier, and the results are amazing. It is creamy and the perfect combination of sweet and tart. I don't even mind that I took off the end of one of my knuckles on my lemon zester! Very Happy I had never had lemon curd before, and I'm glad I tried it. I feel all Martha Stewart that I can make it myself.

I think the only thing I am going to do differently next time is to make half a batch. The recipe made enough to fill 4-1/2 pint jars. That's going to last me a while!

Lemon curd on ginger snaps or ginger bread is absolutely one of my favorite foods!!!

I guess I've been MIA lately - so sorry for the delayed response...
But glad you liked it! I find that while many give jam as gifts at the end of summer I wind up giving out jars of lemon curd! Wink

(You're right - it does make quite a bit! I guess I should've mentioned that)
