I regretfully am giving up Tinkyada pasta due to my rice reaction. The Ancient Grains quinoa pasta has corn in it so it is off limits to me. I tried to make some homemade using a recipe from glutenfreeda and Bob's GF flour. It was really gross.

I am willing to make my own pasta (if I can find a receipe I like DH is planning on getting me a pasta maker for Xmas Very Happy ), but I need a recipe that doesn't contain my no-no foods and tastes good.

Any amaranth recipes? That's the only grain I can think of that might work. I am also trying to avoid nightshades, so anything with potato in it wouldn't work. Not that I think potato would make good pasta. Rolling Eyes

I can't think of the name brand, (I know......big help. LOL) when I was in the GF grocery store aisle the other week, I saw a 100% Buckwheat noodle.

You might be able to do in internet search for it.

They were putting out a recipe over on the Delphi group for noodles. you might do a search over there for the recipe.

Here is one I found on recipezaar.com

I have not tried it.


Fresh Egg Pasta-Gluten Free Recipe

This recipe from "More from the Gluten-Free Gourmet", by Bette Hagman
6-8
servings
time to make 30 min 20 min prep

1/2 cup tapioca flour
1/2 cup cornstarch (Use ARROWROOT for corn free)
3 tablespoons potato starch (tapioca for the potato starch)
3/4 teaspoon salt
4 1/2 teaspoons xanthan gum (use guar gum for corn free)
3 large eggs (or 4 or 5 egg whites)
1 1/2 tablespoons vegetable oil

1. In a medium bowl, combine flours, salt, and xanthan gum.
2. Beat the eggs lightly and add the oil.
3. Pour the egg-oil liquid into the flour mixture and stir.
4. This will feel much like pastry dough.
5. Work the dough into a firm ball.
6. Knead for 1 or two minutes.
7. Place the ball of dough on a potato starch-floured (rice flour turns noodles gray) breadboard and roll as**thin as possible**.
8. This dough is tough and, when almost transparent, will still handle well.
9. Cut into desired shape.

Buckwheat - I remember not doing well with buckwheat when I went GF. I don't think I'm willing to try again, but thanks for the suggestion.

Nance, I use rice noodles for MrP. I want to make the noodle recipe I posted and give it a go with sorghum and possibly teff. I think it would probably do well with Millet in the noodles as well, but I have not gotten around to doing that.

We have been at the lawyer's office most of today. We are trying to get all of our ducks in a row for the long haul of trying to get the SSDI started. We also will have to get back with the VA to see what they are doing on the disability and now that I have to pretty much drive him everywhere, I am not having time to play around in the kitchen. LOL

We go next week for counseling. Things have started to spiral with his symptoms and hopefully this will help to relieve some of the anxiety.

Right now, MrP isn't wanting to play with new foods because of the reactions causing anxiety attacks. We were going to go get some of the root beer at Whole Foods, but he was too exhausted. Maybe tomorrow my MIL and I can make a run for some root beer to help cheer him up.

I don't know if you have tried the biscuit recipe (Featherlight recipe........) and sub. Arrowroot for the cornstarch. Where it says something about the potato starch, you could use tapioca. For the rice, sub Millet and or Quinoa (sometimes I do 1/2 of each. Sometimes just millet.)

This would be a nice biscuit recipe. Sorry I could not be a better help with the noodles!!!

Yup - SF = soy free. No rice per the doc. Arg! Anyone want my cabinet full of rice-based GF sub foods? ARG!

I tell ya, the fun just never ends where my diet is concerned.

This maybe kind of weird, but I know those that are doing the low carb diets do it. We've tried it...it's not bad...

Spaghetti squash...I don't know if squash is part of the nightshade family or not.

CF = corn free. Yeah, I should just put it all in my signature and spell it out 'cause one person's Corn is another's Casein. Wink

I have to admit I'm still in disbelief about having to cut out rice. I wasn't ever a big rice eater until I went GF. I have found, though, that with rice at least, I seem to be able to eat one item w/ rice in it, wait several days to have another, and not have a problem. When I eat rice twice in a short time it makes me feel bad.

Funny you should mention squash, Al, as I have started eating it several times a week in different forms - my favorite being this Squashbread Tea Cake. I have some almost every day as part of breakfast. It is really yummy, filling and gentle on the tummy without being too sweet. I've had spaghetti squash, but I don't think it would hold up too well in soup!

I'll admit it - it took me having to cut out all these other foods to get me to buy some GF flours and get into the kitchen and cook stuff that is new to me. It's about time I got with the program!
