Mr. Al's Beer Chili - Using GF beer
This is a thick chili. You could add extra water or tomato juice to make it more of a soup consistancy. That's what my wife does to her portion.
1 lb hamburger
1 medium onion - diced
1 half of yellow or orange or red bell pepper - diced (I prefer these over green)
1/2 stalk of celery - diced
2 can of Joan of Arc Kidney Beans - drained
1 can Old El Paso Refried beans (optional - this makes it really thick)
1 can diced tomatoes or fresh if you have them
1/3 - 1 whole of a jar of Newman's Mild Salsa
A few dashes of chili powder or McCormick's TexMex Chili seasoning mix.
A splash of A1
Maybe a splash of V8 or tomato juice (or GF beer - non GF in the old days ) if it's too thick.
While browning hamburger - add a splash of A1, peppers, onions, celery. After hamburger is browned - drain or soak up any grease. A paper towel works well for that.
Throw in the kidney beans. Give it stir. Add the refried beans. This will make it quite thick. Add the can of tomatoes & salsa. Add a dash of chili powder. Give it another stir. Heck as long as your stirin' you better taste it to see if it needs anything.
I tend to like my chili thick. So I add some tomato juice or a little can of V8. I will let this reduce until it's the consistency I want.
As I said, Peg will take some this, add a jar of tomato juice, boil some macaroni and mix it all together.
I think that's it...I'm doing from memory...I don't have recipe
Lately we've been leaving it quite thick. We'll chop up some black olives, dice fresh tomatoes, shread some cheese, maybe a bit of sour cream...and have a chili bar and build our own. Peg will spread out a bunch on a plate and then scoop it up w/ Tostito's (Gold works the best - they're thicker). I will put it in a bowl and scoop it out...or...I put it in a corn tortilla. _________________ Al

Thanks Al!
Made the chili for my Super Bowl party and all the gluten eaters loved it. I added the whole seasoning packet and 1/2 c. of Texas Pete. (I'm in the south now but just moved from Chicago so, it is a hot sauce like Chrystal sauce)
My audience are spice/heat lovers. I made it in the crock-pot, on low with serve yourself toppings. Onions, cheddar cheese, sour cream, and more hot sauce if you needed it! |

Hey Dig - glad they loved it! I was thinking about making a big pot today. It's really cold in WI right now. It makes it even worse when you've been in a tropical climate for a week
Peg would kill me if I added the entire packet! It would be way too hot for her. _________________ Al
