Okay, some of you may have already had a great tapioca pudding recipe to sub for the regular Jello pudding boxes, but I didn't. LOL I had been looking for recipes and they all called for tapioca pearls to be soaked for so many hours and all of the pictures had the taipoca pudding lumpy.
That wasn't what I wanted. I wanted a good smooth pudding.
Yesterday I finally took 2 recipes I found online and threw them together and hoped for the best. I ended up with a really, really thick pudding.........but it has the consistancy of the Hunts Snack pack puddings, so I was content. If you don't want your's that thick, you might want to cut back a tad on the tapioca starch.
I used my pudding to layer over pound cake slices similar to my tiramisu directions. I used the cream cheese, sugar, and whipping cream as the middle layer to add the pudding on top of and then made the finally topping a chocolate whipped cream. Mr P said it was good, but his favorite was still the tiramisu. He likes the pudding, so it will be our new pudding recipe because of the ease and consistancy. I will use it for the banana pudding in the future.
Chocolate Tapioca Pudding
2 cups milk
1/2 cup sugar
1/4 cup tapioca starch
1 egg
1/2 cup semi-sweet chocolate chips
1 tsp vanilla extract
In a medium saucepan, stir together the milk, egg, sugar and tapioca. Let it stand for 10 minutes. Place the saucepan over medium-high eye on the stove. Stir frequently and bring the mixture to a boil. Continue to cook and stir for 3 more minutes. This is an important step, so don't take it off before 3 minutes. Remove from heat and add the chocolate chips and vanilla. Stir until the chocolate is melted and the mixture is smooth. Serve warm or cold.
*For Vanilla pudding, leave out the chocolate chips. _________________
