Prepare oven to 190 C/170 C fan/gas mark 5 (374 F?).

Makes 4-6 portions.

Recipe is for Charlotte, Vivaldi, or Nicola potates, but any could do.

900 g. potatoes, sliced thinly (2 pounds?)
3 average onions, slicely thinly
150 ml beef or vegetable stock, or use stock cubes and water (about 5 ounces?)
120 ml olive oil (4 ounces?)
Salt and pepper

Place potatoes, scatter onions, and drizzle olive oil (three times) in oven-dish. Pour on the stock and cook open (no cover) for 45 minutes until potatoes are golden and tender.

(I use about half the recommended olive oil.)
