I'm actually surprised the allergy business isn't starting to boom. I mean, the GF business alone is $1.7 billion. Add all the un-Dx-ed people (good point Steph) and everybody who's allergic to nuts/eggs/soy/etc, and you're talking billions upon billions of dollars.

The burning question on my mind is this: Does the law require that food be TESTED to carry a GF label? In my reading of the law, I don't think this is required. From what I can tell, it is only required that the ingredients in the product are GF.

I'm not sure where I am going with this question, only trying to get clarity on what the law really means. My mind is going down the rabbit hole of shared lines, ingredients contaminated in growing/pricessing, etc.

Any info?
