Easter is coming. Just wondering if any of you had Easter meal plans.
We are hosting [we usually host Easter - It's Peg's fave holiday] an Easter Brunch for her family this year. We are departing from the traditional Easter dinner of ham and all the fixin's.
Menu so far [it keeps changing ]
GF Pancakes for all
A couple of egg bakes [hey C, wanna send us some spare eggs? ]
Fresh fruit tray
Red potatoes on the grill
Cut out cookies [GF and NGF]
Mimosa's _________________ Al

We are probably having a quiet Easter here at home. Most likely the same menu I always do, with a few GF tweaks. We do dinner.
Ham
Mashed potatoes
peas with pearl onions
winter squash
cranberry sauce
rolls (probably Roben Ryberg's since everyone likes them a lot).
pickles, olives, etc
for dessert:
Banana pudding (a variation on a Paula Deen recipe)
a big ole batch of strawberry jello with all kinds of fruit in it, and real whipped cream (my DH's grandmother always made this, and it brings back many sweet memories of watching her make it as she laughed, and talked, and generally just loved the Lord and her family.)

i'm making brunch for my extended family (all gluten and casein free):
mini mushroom spinach quiches
avocado rice salad
creamy hawaiian coleslaw
eggplant antipasto with crostini
baked maple ham
roasted asparagus with hollandaise
hot cross buns
fruit plate
and a cake, a pie, and a 'cheese'cake for dessert _________________ If you're hungry, I'd love your support! |

I usually do a big Easter lunch with extended family, but I am so deep in wedding planning that I haven't even thought about it....YIKES!!!....my DD is having another wedding shower on the Sat prior to Easter and I will have a house full of company again.....I am just too brain dead to think about it, but I will need to feed my company sooo I had better get cracking!!! lol _________________ Connie, mom to Ina, 13 y/o with CD |

DH and I don't really do Easter, but my mom is adapting her typical Easter brunch fare for me this year. It'll be pretty simple: eggs, fresh fruit, sausage or bacon, and some cinnamon rolls (provided by me). _________________ Ostrich :>--O==={

We're going to my mom's house. She is the host of all family holidays. (Once my hubby and I have a bigger place, I hope to take over some of the responsibility so it's not all on her).
She is having:
Boar's Head Ham (I am providing so I know the meat is GF)
Broccoli w/ GF cheese sauce
Carrots
Scalloped Potatoes (non-gf - My aunt makes them)
Rolls (GF and non-GF)
"Easter Cake" - it's a yellow cake with coconut, pineapple, walnuts, cherries and a mix of pudding and cream cheese for frosting. We always have it at Easter, so we call it Easter cake. No idea what it's really called. I will bring some GF cake and my mom will keep some of the topping aside for me so I can make my own cake.
We're having a small crowd this year - only about 6-8 of us. My grandparents are still in Florida - the fishing was really good this year so my grandfather wanted to stay a couple extra weeks. They are usually home in time for Easter.

We will probably do our "normal" Easter dinner. We usually have rare roast lamb and a lot of stuff to go around. It will be gluten free because my husband loves me and my kids and grand kids have to put up with me Since Saturday is my birthday and also my youngest grandchild is being baptized, there will also be a gf angel food cake for dessert as long as I make it.

Easter #1 was yesterday with my family. It was a combined easter/birthday event becasue we have missed a few becasue of my Dad's health.
We had:
Ham
Mashed potatoes
Veggie tray with assorted dips (all GF)
Jello salad
Buttermilk biscuits from Annalise Roberts' cookbook (first time I have made these. They are great!)
Pamela's chocolate cake for dessert
Easter # 2 is today with Steve's family. I think we're having ham there, too.

I wish I had seen this part earlier. I would have sent you some eggs, but we ended doing this instead.

| All I'm responsible for this meal is dessert. So, I've decided to make a lemon cake. I'm planning on slicing the yellow cake into layers then spritzing each with some limoncello (homemade). The filling between the layers will alternate and be either mascapone lemon curd and plain lemon curd. I haven't decided if I'm going to frost it or not. If I do it will be with a simple cooked and toasted meringue, but that might be overkill. We shall see! |

We are doing Easter at the in-laws next week as DH is out of town. I tried to convince them that they could prepare whatever THEY wanted and I would bring my own food, that there are too many potential landmines with all of my dietary restrictions. After much back-and-forth it's been decided that they will cook a few non-allergenic foods on new pans and I will bring whatever else I need. I don't celebrate Easter but DS got a basket anyway. _________________ Nance

Easter breakfast was traditional---Hard cooked eggs after you found your basket, followed by marshmallow bunnies and peeps! It was fun finding the new places to hide the baskets this year because we have only lived here one year. Dinner will be later in the day after my son and daughter in law return from her family's gathering.

deviled eggs
relish tray
cranberry sauce
We have not yet eaten dessert which will be

We ended up having two dinners on one plate:
Beef tenderloin with horseradish sauce
Ham
Sweet potatoes
Parsley Potatoes
Pineapple casserole thingamajig
Green Beans
Salad
Lemon Cake
Fake niece and I decided that we would have Easter Redo on April 13th as it seemed very winterlike today. How can it be Easter with snow on the ground and no dafs blooming? FN's mom didn't make Easter baskets and they didn't color eggs. First thing tomorrow AM I'm going to run out and get the proper fixings for Easter fun...we already have a date to color eggs on April 12th!
I see a lamb cake in my future...red velvet with chocolate frosting. |
