I have not trid this recipe yet. I plan to try to get to it at least by this weekend. I found the orginal recipe on a make it yourself website and i changed it to CORN FREE. (MrP......will love me for this one next time he has cocoa. LOL) Seriously this should help some folks out that need to keep KOSHER during Passover.
Corn Free Marshmallows
2 C. granulated sugar
3/4 C. water
2 T. Agar Agar*
1/2 C. cold water
1 tsp. vanilla extract
1/2 tsp. salt
Tapioca Starch**
Corn Free Confectioners' sugar***
Mix granulated sugar with the 3/4 cup water. Simmer to soft-ball stage. Remove from heat. Soften gelatin in the 1/2 cup cold water. Place on a large platter. Pour hot syrup over softened gelatin. Stir until dissolved. Let stand until partially cooled.
Whip until thick and white, and mixture will nearly hold its shape. Add vanilla extract and salt. Pour into straight-sided pans lined with equal parts of cornstarch and confectioners' sugar, mixed together. Let stand in cool place until firm (not in refrigerator). Cut into squares with scissors or cookie cutters and dust with confectioners' sugar.
*Put granulated sugar into the blender along with about 1 tsp of potato starch and blend until the sugar becomes a powdery that is the consistency of confectoner's sugar. (this is much cheaper than the corn free bag at $4 a pound)
If you are not on the corn free diet,
*unflavored gelatin can be subbed for the agar agar''
**Cornstarch could be used to line the trays for teh candy
***Use regular confectioner sugar _________________
