Traditional lemon squares with lime juice instead. A little bit of toasted macaroon coconut in the crust for flavor and crunch.
Crust
3/4 cup + 2 tablespoons brown rice flour mix - see note
1/4 cup toasted macaroon coconut - see note
1 teaspoon xanthan gum
¼ cup granulated sugar
1/4 cup softened butter
Baking spray
Preheat oven to 350°F. Spray bottom of 8–inch square baking pan.
Place first 4 ingredients in bowl of electric mixer. Mix a few seconds until combined. Add butter. Mix on low speed until crumbly. Press into bottom of baking pan. Bake in center of oven for 15 minutes.
Lemon Filling
3 large eggs
3/4 cup granulated sugar
2 tablespoons brown rice flour mix - see below
1/2 teaspoon baking powder
1/8 teaspoon salt
1/3 cup fresh key lime juice - see note
Lime slices or powdered sugar for garnish
Beat eggs in large bowl of electric mixer at high speed until foamy. Add sugar, flour, baking powder, salt and lime juice. Beat until well blended. Pour onto partially baked crust. Bake in center of oven for 20 minutes or until set. Cool on wire rack. Cut into small squares. Garnish with powdered sugar or lime slices, if desired.
NOTES
Brown Rice Flour Mix
2 parts brown rice flour / 2/3 part potato starch / 1/3 part tapioca flour
Macaroon coconut is not the same as flaked coconut. It is finely chipped, unsweetened coconut. It has about the texture of almond meal.
Key limes are the little tiny limes that usually come in a bag. They are about the size of a quarter. _________________ -Colleen
