I found this web-site that looks promising. They have a lot of GF/CF products. I'm going to try a couple of their products. The pizza crust looks really good. They say their flour blend can be used cup for cup in any traditional recipes.

OK. I've ordered their regular flour mix, the seasoned flour mix for breading, and the pizza mix. The site said the stuff should be here in a week or less. I'll post how these things work out.

I really can't wait to try the seasoned flour mix. Living in Maine, we love fresh, fried seafood. I tried not to indulge in it too often, but it is one of the things I have really missed since going GF.

Supposedly the regular flour works just like wheat flour, so you can do things like roll out yeast breads for sweet rolls, etc. It will be nice if it works. I hate dealing with everything GF being a sticky batter.

Some of their products are available in stores too. Hy-Vee stores carry it, but we don't have any around my area.

I have only used the pizza mix so far. I didn't want to open the big bag of flour until I got a big enough air-tight container for it.

The pizza mix is excellent, and only uses water to mix it up, however the mix itself contains whole egg, so that would not be an option for you. I was waiting to post on this until I had made a couple more pizzas to be sure the results were consistent, but DH and I like this mix even better than (dare I say it?) Chebe. Much easier to use than Chebe too.

There are some threads on the board concerning things you can substitute for egg. I'll try to find them, and bump them to the top for you, if someone else hasn't done it already.

GF cooking needs eggs so much. It must be frustrating for you. I can't believe how many eggs I use since going GF.

I have to tell you, after I used this (regular flour blend) I cried. Not of disappointment, but of sheer hope.

I made the pizza crust that is on the package and it was better than my gluten blend. So wonderful. I also made cookies with it and they were just like regular. Very Happy

My husband was so pleased also. He's not celiac. It is expensive, but worth the money. I wrote them and thanked them for this blend. This particular blend is just right.

Hi Stephanie! It shouldn't be too hard for me to remember your name (at least on the days I can remember my own. Wink )

I agree that the pizza mix is just great. I would urge anyone to try it. The first time I made it I thought I could perhaps get away with using my food processor to make the dough, instead of the mixer and dough hooks like the package said to do. For some reason the dough stayed very batter-y, like most GF doughs. I had to pat it into the pan, but it was still very good. The second time I made it I followed the directions (what a concept Embarassed ), and I got a dough that I was able to roll out, fold it in half, and get it on the pan. I was making a big enough dough for my 16" pizza pan, and it handled fine. Anyone thinking calzones might be in their future again??? The flavor and texture are great, and prebaking the crust doesn't seem to be necessary. I would probably still use a thicker pizza sauce as insurance. I also like that yeast isn't necessary for this dough, and yet it rises just fine, so some potential uses for people with yeast sensitivities.

Can't wait to try the regular blend! Glad you liked it. It's nice to be able to use old familiar recipes and get great results.

I just bought a bunch of this flour too. I can't wait to use it. I want fried chicken and pizza and everything I missed. I haven't used it yet, but I plan to this weekend. Let me know what all of you are doing with it and how you like it. and I will do the same!

That better be some damned good pizza mix. Or at least be able to make multiple 'zas.

It's a 5lb bag and can make a lot of pizza's. I know it's a lot but if they can be chewy it is worth the money to me.

I found 4 friends to share a 5 pack of 5 lbs bags with. It worked out to $11.50 each including shipping for the regular blend. Oh, and the company goofed and sent both a 5 pack of 5lbs bags AND a 25lbs bag. I emailed and told them of the error, and they said their mistake was my blessing... LOL So I gave the last 5lbs bag to another GF friend who couldn't afford to get in on the group buy with us. Anyway, just wanted to put that out there as an option for folks. They say the shipping is almost as much for a 5lbs bag as for 5 of them, so it does work out cheaper to get the 5 pack.

Me too. Made the cinnamon rollups yesterday and they were a little hard. Guess I either kneaded them too much or baked too long Embarassed

The blend is only rice, corn and tapioca and a bit of xanthan for $15 plus shipping. I'm surprised none of you are making this on your own.
