Chewy Oatmeal Cookies

From the Glutenfree Forum. We took these to a potluck yesterday with the Gluten Eaters. The plate was licked clean and several people asked for the recipe. If you choose to make this recipe, use only certified gluten free oats, wait at least a year after diagnosis, and discuss it with your doctor first.

1 cup firmly packed light brown sugar
1 cup sugar
1/2 cup butter or margarine, softened
3 large eggs
1 1/2 cups creamy peanut butter
1 tsp. vanilla extract
1 tsp light corn syrup
4 1/2 cups Certified Gluten Free rolled oats (GF quick oats would also work. See recipe for details)
1 cup semi sweet gluten-free chocolate chips
1 cup sweetened flaked coconut (original recipe called for M&M's, but I didn't want that much chocolate)
2 teaspoons baking soda

Pulse oats in the food processor a few times in 2 or 3 batches (You can skip this step if you are using GF quick oats). Set aside. Beat sugars and butter at low speed with an electric mixer until creamy. Add eggs and next 3 ingredients, beating until combined. Stir in oats and remaining ingredients.

Drop by tablespoonfuls onto parchment paper lined baking sheets.

Bake, in batches, at 350 for 15 minutes. Allow to stand on cookie sheet for a few minutes after removing from oven. Remove to wire racks to cool.

Oh very good! Peg's be tinkering with an oatmeal cookie recipe. We're trying to decide if we're going to do cookie daze this year. If we do do it, it'd be an OC. It'd be a great educational tool - about oats and cc.

OC? I've got a sure fire Cookie Daze concept winner. The base needs a bit of tweaking but even so they are still good. Let me know and I'll send yo the recipe.

EDited to add: Duh! OC = Oatmeal Cookie. Disregard the concept winner...not a bit of O in the recipe.

Peg had a chance to make these for me today. They are good! We used BRM Oats and they taste a bit..."oatmealy" to me. Maybe quick cooking GF oats would taste differently? Peg wants to try these with M&M's next time. She thinks they taste like Monster Cookies. We talked about adding a a bit of crispy rice cereal to it thinking it might cut the oatmealy taste for me.

Please tell me, what are oatmeal cookies supposed to taste like? Wink Just kidding, I know what you meant. BRM oats are not my favorites. The last ones I got tasted rancid to me. And they are really thick. Does anyone make an instant GF oat? I've got to try those cookies. Oatmeal cookies are DH's favorites. He likes chocolate chips and dried cranberries in them.

I thought the same thing about the BRM GF oats. They seemed rancid to me as well and I ended up throwing them out. They also never really cooked down (and I always bought the slow cooking kind before, so that's not it). Something just seems odd about them and I can't put my finger on it. It can't just be because they are grown in separate fields, lol.

Those cookies look so good! I have yet to try slowly adding oats- but I do miss them so much. I used to eat them all the time. Maybe I'll try them. Do you think they would work with part oats part quinoa flakes? Just curious.

I don't think they're rancid. It's just...that...they...smell and taste like....a feed mill Wink

These are beginning to grow on me. I am not a huge oatmeal eater, so perhaps it was just my "unfamiliarity" with them.

I'd have to ask Peg, but, yeah I suspect so. That's what she used to use until the GF oats came along. It'd probably be really good with a mixture like that!

Do you mean quick oats? Only Oats makes them. I don't think you would want to use instant oats for cookies.
