Today I made a French boule using a recipe from the current issue of Living Without. It was a variation of the French Baguette recipe. It was so delicious! It was also very easy to make, and only took about 1-1/2 hrs. from start to finish. I did try a method for rising the dough that I read about in the CIA GF Baking cookbook I just purchased. They say that you get better results with a moist rise like they use in commercial kitchens with proofing equipment. They suggested putting a 1 c. measuring cup of water in your microwave and bringing it to a boil. Move the cup to the side and place your pan of dough in to rise. It worked beautifully. I didn't cover the dough with a towel while it rose and it was fine. _________________ Steph |
