What can everyone tell me about Hemp Flour?
I'm searching for info and how much to add in on breads...
We got a new organic store (really big!) here in my area and that was one of the many gluten free options available. I got a box and now I'm scratching my head saying "now what?"
I found some chocolate made with hempseed and it was so good, it tasted almost like hersheys, with more chocolate and less cost (no import!). So that one is a definite "do it again".
DH said we've hit our monthly budget, so he doesn't want to go to the store until next month... and we're out of chocolate..  _________________

I haven't used hemp flour yet (and won't). When I first went GF I bought some hemp wraps at the HFS. They were absolutely vile. I took a taste of one, and immediately spit it in the sink. My best friend was at my house that day and told me I was being too fussy. She'll eat anything. However, she tried one, and had the same reaction. So, I guess there is one thing she won't eat. I think if I were going to use it, I would go really light at first.
BTW, I'm of a certain age that remembers when it was illegal to put hemp in things like brownies. Yeah, I know, a slightly different form, but IMO it still should be illegal after tasting those wraps.  _________________ Steph |

Duuude - That's a downer - I think you really should give hemp a fair chance, y'know? It's totally righteous stuff, man...

Totally endorsing this for the next Close Encounter.
Anywho, the idea of using hemp flour seems....different. I can't really picture cooking with it. I'm curious to see if anybody else has tried it. _________________ Ostrich :>--O==={

Hi I also have a bag of hemp flour, which I got as a present, so far I have
seen no recipes using it, I would imagine a 10% sub of regular GF flour, in Muffins, Pastry, or Bread mixes a bit like 'Teff'.

I won't be trying it for a bit, lot's of other things to try first!!

Yes, hemp torts are pretty nasty, but tolerable when eating sliced beef w/ lots of onions and mustard.
I use hemp powder in my smoothies and it adds lots of fiber, protein and a gentle, nutty flavor. Very palatable.
Hemp is really amazing in that it can be used as food, fuel, fiber for fabric, rope and other stuff, as well as soothe the masses.  _________________ Nance

It has been a very long time since I thought about it , but as I recall, the reason that you were supposed to use brownies when adding the other forms of hemp was that you needed a very strong flavor to override and kill the taste of the illegal forms of hemp that you were using.

I cooked with it last night and had a winner recipe. I made "oven fried chicken "nuggets"". I put that in quotes since it was gulash cuts of meat, and smaller than most nuggets.
I soaked it in milk that I had spiced and salted for about an hour (give or take) and did about 1 cup millet and 1 TBS+ 1Tsp of hemp flour to roll it in.
cooked it on a cookie sheet that had been buttered well for about 15 minutes at 400F, flipping once.
I absolutely loved it, but DH said it tasted too "Whole wheat" for his tastes (he prefers his breading starchy, with no substance and as sugary as possible -- i.e. no minerals or vitamins left)
It went well with rice and carrots. _________________

I just wanted to add that I am using this in small amounts for breaded food items and it comes out really well and I'm not craving some of the vitamins like I had been before
I might have used about 1/2 cup out of the 2 pound box I purchased. _________________
