Cranberry Pecan Conserve
from Glorious Gifts From Your Kitchen by Lisa Yockelson

3 c. sugar
3 c. water
8 c. (2 lbs.) cranberries, picked over
1 c. dark seedless raisins
1 1/2 c chopped pecans
1/4 c. fresh lime juice
2 t. ground cinnamon
1 1/2 t. ground ginger

Combine sugar and water in large, heavy lidded pot. Dissolve sugar over low heat, uncover pot, bring liquid to a boil for 3 minutes. Add cranberries and boil until they pop. Stir in remaining ingredients. Bring to a boil again then reduce heat and gently boil about 15 minutes or until conserve begins to thicken.

Pour into a large container, cool, cover and refrigerate for up to 2 months.

Alternatley, pour into pint jars to 1/4 inch from top, seal with lids and bands and process in boiling water bath for 15 minutes.
