This was a hit at Thanksgiving. It smells really, really sweet when it's cooking. But I found it to be just the right sweetness when done. Modified from the original recipe.
Cinnamon Apple Chex Mix
5 cups Rice Chex cereal
1 cup whole almonds
1/4 cup butter or margarine
1/3 cup packed brown sugar
2 tablespoons light corn syrup
1 teaspoon ground cinnamon
1 small bag of apple chips (I used the Cinnamon Apple chips from Seneca)
1/2 cup vanilla yogurt-covered raisins (sub out for regular raisins if you want this to be less sweet)
1. In large microwavable bowl, mix cereal and almonds.
2. In 2-cup microwavable measuring cup, microwave butter, brown sugar, corn syrup and cinnamon uncovered on High about 2 minutes, stirring after 1 minute, until mixture is boiling; stir. Pour over cereal mixture, stirring until evenly coated. Microwave uncovered on High 2 minutes, stirring and scraping bowl after every minute.
3. Spread on waxed paper or foil to cool, about 15 minutes. Stir every 5 minutes or so to prevent the cereal from clumping. Place in serving bowl; stir in raisins and apples. Store in airtight container. _________________ Ostrich :>--O==={

Are vanilla yogurt raisins GF? I've always bought them at HFS's and have never seen an ingredient label on them because they've been repackaged from a bigger bag. I'll bet dried cranberries would be good also. _________________ Steph |

I believe we got ours from Kroger, which has excellent labeling practices. I second the dried cranberries idea. Plain Craisins are GF (avoid the mixes). _________________ Ostrich :>--O==={

Woo, I'm glad it worked! I was going to try dried apples, but they looked like....well...um.....they looked like used condoms and I got grossed out. So no worries. _________________ Ostrich :>--O==={
