Not that I'm dissing this group, but your should try Vegiac.com. It has stuff and discussions for both vegetarians and vegans who have celiac. _________________ Most people don't know there are angels whose only job is to make sure you don't fall asleep and miss your life! |

FWIW I got some lovely GF vegan cookies from the Sun Flour Baking company. I have to admit, I was pretty skeptical (I'm not a vegan). How on earth can you make a cookie without wheat flour, eggs and milk?
But they were delicious! I gobbled them up within a week. My favorite was the mint chocolate chip, but they were all good. Two thumbs way up. _________________ Ostrich :>--O==={

Vegetarian Celiac, almost vegan, except for honey and yogurt. Vegiac.com is a good source for info.
I tend to eat very simply:
Breakfast:
Granola or Muesli - homemade
fruit
juice
coffee
Lunch:
Salad or Veggie Plate
Rice or GF Crackers or a whole GF grain
Tea
Dinner:
Steamed Veggie/Veggie Burger/Polenta - whatever sounds good
Salad
Fruit
Tea
Snacks:
Smoothies
Fresh Fruit
Food Bar - homemade
I also take vitamins and supplements, I have osteoarthritis so I have to be careful what I eat or I have more inflammation in my joints.
I also drink 6 to 8 liters of alkaline water per day, and keep my body as alkaline as possible to avoid additional health issues. _________________ Never let your fears become the bounderies of your dreams! |

I realize, too, I didn't answer your initial question.
In the summer, I go mostly raw, but in the winter I am not too keen on it.
I eat a ton of vegetables and eat my fruits.
Nuts, seeds, nut and seed butters.
Legumes of all sorts.
Quinoa and amaranth in abundance.
Tofu, tempeh, TVP.
Sometimes whole grain rices and pastas.
Homemade whole grain baked goods and treats.
I don't buy anything pre-made except mustard, and a couple staples, like miso paste and the all-natural nut butters. I get my B12 from nutritional yeast and my protein from the stuff above, and a load of calcium from almonds, tonnes of leafy greens daily (they are my favourite), sesame seeds/tahini, tofu.
Like Noahswife, I only drink water, but also have a coffee in the morning and I like Celestial Seasonings blueberry tea. I use unsweetened original Almond Breeze in my coffee.
The only pre-made thing I buy are Larabars, for days I'm in a bind (I don't eat at restaurants or take chances, so sometimes its good to have the option on hand). I find that, although it is easy to make them, its hard for me to find sulphite-free dried fruits and guaranteed safe nuts and seeds to make them, making it more trouble. _________________ Gluten-free, vegan blog: Whisking & Writing
