Hi All,

I've been MIA lately, but I have a question I hope you'll be able to answer.

Can I replace soy flour with sorghum? I just bought a cookbook that Ty's celiac classmate's father wrote. He doesn't call for sorghum in any of his recipes, but does seem to have a number of recipes with around 1 cup (more or less) of soy flour. I've tried soy in the past and was kind of turned off by the taste. I'm hoping I can just replace it with sorghum, but I can't find anything on the net or in my cookbooks that says I can.

I was just reading info about substitutions, but my sleep-depived brain cannot remember where I found it. anyway, it said the soy is actually the heaviest of the gf flours and when subbing to use a medium flour, one of which was sorghum. But i don't remember reading if you could sub it cup for cup. I think you can, but not sure if maybe you need to use another flour with it for flavor purposes. But isn't sorghum pretty mild?

Sub away! I am not a fan of the taste of soy flour either.

Thanks ladies! I'm going to try banana-chocolate chip muffins. Of course the recipe offers options for both nuts and berries, but not chocolate chips. Rather than have the boys revolt for putting nuts or berries in, I'll go with the chips.

I'll let you know how they turn out.
It's just luck I even was able to get the cookbook. The author has been working on it for a couple of years and I ran into the author's son at school. He said, "Hi Mrs. S. Did you get your cookbook yet?" I asked him what cookbook and he said his dad's cookbook had finally got published, and he had them for sale, but that he didn't even have his own copy, just the dummy from the publisher. I gave him my contact info and he brought the cookbook by the next day. I even got a free autograph.
I think he self-published, or has just a very small publisher, so I'm not sure how he will sell, via website or what. The one thing he has that I've missed is soda crackers. I might try those soon. After Christmas perhaps.
