Ingredients:
1 lb chicken breasts
1 large jar mixed beans (48 oz) (I used Randall Deluxe Mixed Beans)
1 large can whole peeled tomatoes (or tomatoes of choice--1lb, 12 oz)
2 cups salsa (I used Newmans Own mild salsa)
1 cup chicken stock (Kitchen Basics)
1 teaspoon chili powder (McCormick)
1 tablespoon ground cumin (McCormick)
You can mix and prepare the ingredients together however you like, but this is how I did it.
1. Boil or cook chicken until done or just underdone.
2. Pour all ingredients into large pot (except chicken)
3. Hand squeeze tomatoes to break apart (careful so whole tomatoes don't squirt you--it helps to squeeze them under the other ingredients rather than pulling them out to squeeze them)
4. Cut or hand shred chicken into preferred size pieces
5. Cook just below medium 1 hour covered, then reduce heat for 1/2 hour. Stir occasionally if desired.
You can modify any of the ingredients or amounts if desired (ex. more chicken stock if you like a soupier chili or more chili powder for a hotter chili) You can also change the meat and stock for a different flavor (ex substitute prime rib and beef stock). If you like to soak your own beans or use beans of choice, you can do that also of course. |

That does look good!! I don't think I've ever made chili without hamburger. I think I'll have to give this a try. _________________ Al

I found out about this because I had chili at a restaurant with Prime Rib instead of hamburger. When I mentioned it to my friend Rob, he told me about this recipe which was originally for chicken, but any meat can be substituted in. It's nice and different too. |
