OK, I've read alot about soy allergy/sensitivity. I'm just staying away from anything soy for the moment and it is making a difference. But it seems like there is some confusing information about what is/isn't allowed and what to look for. Also, the possibility of additional allergies as a result. So I figured I'd ask here from people who are a bit more experienced.

- I've seen the lists of "what not to eat" and it looks pretty straightforward. Although it seems like there are inconsistencies regarding labelling requirements. I know I've seen stuff that has soy in it for the ingredients, but then they don't have a "contains" item at the bottom. I guess having it listed in the ingredients is sufficient? I thought the "contains" item at the bottom was a requirement.

- is "contains soy" only for soy protients, or does it include soybean oil?

- for those that are sensitive to soy, is soybean oil or soy lecithin a problem? There seems to be alot of conflicting information regarding that... I am almost positive I had issues w/ soybean oil (well -- it explains several times that I had a gluten-like reaction to things that were gluten free i.e. hummus).

- How frequent are there associated sensitivities, such as lentils or peas etc? I even read somewhere that people who are sensitive to soy are sensitive to canola oil? Again, alot of conflicting information out there...

Right now -- I'm erring on the side of caution for a while and staying away from all soy. But I'm trying to decide if at some point I should test the "limits" for my soy issue.

I stay away from soy oil - nasty stuff. I avoid canola oil as well - just because. I use only olive, grapeseed and coconut oils.
I do not have any issues, that I know of, with soy lecithin, though I limit how much I am exposed to that, too.
I can eat soy cheese sparingly; really only tried it a handful of times since I dropped soy over a year ago.
I have no known allergy (delayed or otherwise) to soy, but I started having issues with it, so decided it was better to eliminate it as much as possible. It's only recently that I've tried soy cheese, and only because I have no other options for cheese. IMO all non-dairy cheese really sucks, so I pretty much don't bother.

Thank you so much! You reinforced my opinion of not only soy oil, but also canola oil as well! It just seems unnatural. I mostly use olive oil. But if I need a light flavor, I usually now use sunflower oil for cooking and walnut oil for dressings. I'm curious what the appeal of grapeseed oil (not questioning it, just curious what you like about it). but especially I'm VERY curious about coconut oil. I've seen it all over the place and have heard interesting things about it's health benefits. Have you found any benefits, or do you just like having it as a "solid" shortening/butter replacement?
