I have a new trick for baking cookies that is working really well for me.
-Start with a regular gluten cookie recipe.
-Substitute brown rice flour mix 1:1 for the gluten flour - see note
- For each cup of gluten flour you are replacing add 1 tablespoon coconut flour and 1/4 teaspoon xanthan gum.
- Whisk the brown rice flour mix, coconut flour and xanthan in a separate bowl and proceed as normal.
- Always refrigerate cookie dough overnight before baking
This gives me consistent results that are indistinguishable from my gluten cookie recipes.
Note - Brown rice flour mix - (2 parts brown rice flour / 2/3 part potato starch / 1/3 part tapioca flour)
