Pineapple Whipped Cream Salad

1 envelope Knox unflavored gelatin
1/4 cup cold water
1 cup crushed pineapple, drained, liquid reserved
1/2 cup sugar
1/2 cup pineapple juice, from can
1/2 pint heavy cream, whipped
1 cup white or yellow American cheese, grated

Soften gelatin in water. Dissolve sugar in juice over low heat. Add gelatin, stir until gelatin dissolves. Chill to thicken slightly, about 20 minutes. Add pineapple and cheese. Fold in whipped cream. Chill.
