Just the right texture for piping and icing your favorite GF cake. Really wonderful taste, and not cloyingly sweet like some other buttercreams. Using 1/2 butter and 1/2 shortening helps avoid the greasy texture of some other buttercreams. Modified from Allrecipes.
Perfect Buttercream Icing
1/2 cup shortening
1/2 cup salted butter
3.5 cups confectioners' sugar, sifted twice
1/4 teaspoon kosher salt
1 teaspoons vanilla extract
3 oz. heavy whipping cream
DIRECTIONS
In a mixing bowl, cream shortening and butter until fluffy. Add sugar, and continue creaming until well blended.
Add salt, vanilla, and whipping cream. Blend on low speed until moistened. Add additional whipping cream 1 tablesoppn at a time if necessary. Beat at high speed until frosting is fluffy. If you can whip it for 10 minutes or so, you will get a really fluffy, delicious result. _________________ -Colleen
