I was wondering if anyone had any good perogie recepies? Before my dx my grandmothers perogies were my most favourite food ever, and she made them again last night and I couldn't eat them I know that the ingredients in the filling she uses are ok for me so I was wondering if anyone knew of a good dough recipie so I could try to replicate ones that I can eat! _________________ *Wendy*

Could you post the recipe? Maybe we can convert it! It may take some experimenting, but I bet it can be done

There isn't really a 'recipie'. Its kind of one of those things that get passed down and you just learn. I bet if I sat there long enough I could figure it out and write it down.. but I'd have to figure it out with the non gf ingredients. If I'm going to sit there and spend all that time.. I might as well try to figure out a gf version of the dough! lol.. I really wish I had the time to do that... I do know that the insides consist of (riced) potatoes, grated cheddar cheese and butter (a fattening combination which is beginning to make me drool.. ) _________________ *Wendy*

I guess that's what I'm saying...if you post the NGF version of it...we could figure out how to make it GF and post the GF recipe for you. I venture to guess just any recipe would not taste the same as Grandma's. With her NGF "recipe", we might be able to get close.

How 'bout this...I have not tried it...but it's a starting point for you

GLUTEN FREE PEROGIES
1 cup cottage cheese
1 large egg
7 tbsp milk
2 tbsp oil
Blend wet ingredients in a blender until smooth.
1/4 cup potato starch
1/2 cup cornstarch
1/2 cup tapioca flour
1 1/2 cup white rice flour
1/4 cup soy flour
3 tsp xanthan gum
1/2 tsp salt
Sift dry ingredients together. Mix dry and wet ingredients and knead until soft. Leave in a bowl, cover, and let stand while you make the filling. Roll out the dough on a floured or oiled surface. Roll to about 1/8 inch thickness.
Note: I had a spray bottle of oil from pantry chef (vegetable oil spray should work) and as I rolled out the dough and cut circles I kept spraying my hands with the oil. This kept the dough soft and elastic making it easier to make perogies.
To cut circles I used a 19 oz tin can. A salmon or tuna can is also the right size to make perogie circles. Spoon about a tsp of filling on the circle and pinch shut. Have a dish of water handy as wetting the edges of the dough makes them easier to pinch shut with out them falling apart. Freeze before cooking.
Filling
Cook and whip potatoes. Spice potato filling any way you desire. I made a potato, cheese and onion filling.
The perogies turned out so yummy you couldn’t even tell they were GF!

OMG! Pierogis were the one thing this Polish boy never thought about not being able to have! Every year the Saturday after Thanksgiving my 3 Brothers and I go down to my Mom's house to make Pierogis for the Holidays - and some extra to take home with us! I'll have to give that recipe a try and Emily and I can bring our own GF Pierogis to Christmas Dinner! Hmmm, speaking of Christmas Dinner, does anyone know offhand if Kielbasa is GF? I was going to check at a few local places but haven't had the time. I thought going through the Holidays GF would be hell, but with that Pierogi recipe things are looking up!

1 small can sauerkraut
1 small onion finely chopped
1 can mushrooms or (preferrably)
1 pkt imported dried mushrooms
Empty sauerkraut into a collander and rinse thoroughly, drain.
In large frypan, melt butter or margarine (abt 1/4 - 1/2 stick.
Add onions, sauerkraut and mushrooms. Saute until tender,
stirring frequently.Salt and pepper to taste. If using dried mushrooms, soak in small amount of water to reconstitute. before sauteing. Fill dough
with about 1 tbls of kraut before sealing.
By itself, this makes a good side dish to go with your kielbasa.

It's just for the dough on the outside, because for the insides you're only limited by your own imagination! These freeze very well and my family loves them. The dough is surprizingly easy to work with.
