This is a recipe we adapted from EatingWell.com
1 pound green beans
1 tablespoon chopped shallot or chopped garlic
1 tablespoon extra-virgin olive oil
1 tablespoon lemon juice
1 teaspoon whole-grain mustard
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
Steam beans until tender-crisp (5 - 7 minutes). Remove from heat
In a large bowl, whisk together shallot, oil, lemon juice, mustard, salt & pepper.
Add green beans - toss & coat.
Let stand for 10 minutes before serving to blend flavors.
Options:
Original recipe called for 4 teaspoons chopped fresh dill
We sub out the shallots for chopped garlic. _________________ Al
