My 4 year anniversary of celiac diagnosis is this month. I have baked 2 - 3 loaves of bread a week every week since then. If you calculate it out, that means I have baked over 500 loaves now. And they taste pretty good after working all the kinks out on the first 50 loaves or so.
I think some nice bread machine manufacturer should donate a machine to me to commemorate this occasion.  _________________ -Colleen

Pretty much the only kind I make anymore is Elizabethe Barbone's sandwich bread recipe, the easy version that is from Delphi (the #7 post in that thread). It never fails, and the taste and texture are great. I mix up the dry ingredients 10 at a time so all I have to do is dump, add the wet ingredients and go.
Aw, man, I forgot to include all the times I have made that flatbread recipe. That probably adds another 50 to the count right there. My husband and kids like bread  _________________ -Colleen

Well, I don't have a bread machine. But my Kitchenaid mixer and my Pyrex bread pan that I got for a wedding present almost 14 years ago are still going strong! Lately I have been ruminating a lot about buying a bread machine, but haven't quite made the plunge yet.  _________________ -Colleen

WOW! That's a lot of bread.
I'm lazy and wrap everything in corn tortillas. If I'm feeling motivated I make english muffins to use for burgers too.  _________________ Cheers!
