Hawaiian Coleslaw

A nice change of pace from traditional coleslaw. I always have people ask me for the recipe when I bring this to a picnic or potluck.

Hawaiian Coleslaw
4 cups green cabbage, shredded (about 1/2 of a medium head)
1 can crushed pineapple, drained (squeeze it to make sure all the extra liquid is out)
1/4 cup Raisins
1/4 cup chopped walnuts
1/4 cup flaked coconut
3/4 cup GF coleslaw dressing, prepared or homemade (simple slaw dressing follows)


Toss all ingredients in a bowl. Chill for several hours before serving.

Simple Slaw Dressing
3/4 cup mayonnaise
2 tablespoons vinegar
1-1/2 tablespoon sugar
3/4 teaspoon celery seed
