I talked to a lady tonight who said she saves the crusts from her son's sandwiches to use as bread crumbs.

I usually use Southern Homestyle Corn Flake Crumbs from the SoyNut Butter Company for breading.

I rarely finish a loaf of bread and before it 'goes' I put it in the freezer. I simply put the pieces, frozen or thawed, in the food processor and pulse until they reach texture I want. I've also used cornbread as breadcrumbs with fantastic results.

If grinding pieces of bread is too much work for you, Gillian's makes bread crumbs. There's also another brand of GF bread and tortilla crumbs but I can't remember the name.

We also use our own homemade bread for breadcrumbs. If I have a loaf I know we are not going to finish before it goes bad, I will spread the slices on a baking sheet and put in a warm oven until the slices are crispy and brown (you can skip this step, but I prefer the flavor of toasted breadcrumbs.) Then process in the food processor, and store in Ziploc bags in the freezer. I also sometimes make a batch into italian seasoned breadcrumbs. They are great.
