A few months ago, we roasted a turkey. Often we take the bones, boil them and make turkey broth. We did that this time, put it in a jar and put it in the freezer. We also stashed half the the turkey breast in the deep freeze too.

Tonight we thought we'd have turkey, mashed potatoes and turkey gravy. Peg wen to the freeze and got out our turkey stock. The jar was broken - cracked in several places. Guess it was filled too full or the jar is not meant for freezing.

Now what do we do?

Saute carrots & celery, caramelize onions in some EVOO.
A few squeezes of lemon juice.
Salt & Pepper to taste.
A few pinches of Al n Peg's Turkey Seasoning

Add the veggies and some GF chicken stock into your blender or Bullet. Make it smooth or chunky as you like.

Pour the rest of the 14 oz can of chicken broth in the pan. Pour in the veggie puree.

Bring the sauce to a boil and thicken with your favorite thickener.

We put the turkey in glass pan, poured the sauce/gravy over the cold left over turkey in heated it in the oven.

This sauce is really good over potatoes too!

Years ago, we did something similar with a can of veggie soup. We whizzed it up and used it as gravy for potatoes. While it sounds kind of goofy, it really is good. I think it was after I got out of the hospital from a diverticulitis flare.
