Hi guys,
I mentioned a while ago I was having problems with rice. Its now been confirmed I have an intolerance to rice (white, brown, wild, basmati), sugar - sucrose, seeds, all nuts, chocolate, and alcohol. As well as wheat, rye, barley and DEFINITELY oats.
They were only able to test me properly for all of these once I have been GF for a while and had got rid of my parasites. Had a huge list of parasites - only one left!
Been GF for just over 4 months now and I am like a different person. Feel so well. However I have become incredibly sensitive to foods - I know immediately when something doesn't agree with me. I get a "rattling" or "gurgling" just under my ribs straight away - sometimes when I'm still eating the offender.
Anyway, waffling on here. My diet has become very limited - but at least I am ok with dairy.
Does anyone know if I should be able to have rice flour? This is a concern because its in my bread. I know the rice pasta makes me very bloated.
Wouldn't know what to do about bread otherwise!
Sorry to be so long winded! Just so excited about feeling so much better, getting rid of my parasites etc.

Hi there! Well I know as far as pasta goes you can get a corn pasta. It's OK, not great but if you want pasta, it will do . I have made spagetti for the family and no one has complained. I am going to be tested next week for food allergies. Went to the doctor yesterday and he said he definitely wants to test me again since in 2002 it showed very little sign of being allergic to soy so he never mentioned it but I told him now it makes me super sick. I don't know what other kind of products for you to use. I would check out the gluten free mall and see what they come up with.

Hi Nikki,
Thanks for your response. I can't find corn pasta here and we definitely don't have a Gluten Free Mall or anything like it!
I live in South Africa - the back of beyond in some ways!

Hi Yvonne,
Thanks for the update! I am glad that you are feeling so much better! I hope you get rid of that one last critter.
As for rice flour...I would guess it would cause the same problems. It's nothing more than rice ground up.

Ok Al - thats NOT the answer I was looking for. You were supposed to say rice flour was completely different and would be fine for me! Ha ha!

Sorry to hear about your limited diet.
Could you make up a mix of potato flour or starch with tapioca starch or cornstarch?
You could then make bread from that mixture. _________________

How about using quinoa flour?
I've never tried to look for it....but I believe it exists...
I'm sure there are others here who know more about it though.

Thanks for your responses Andi and Mrsppm.
I have heard of quinoa but have never actually seen it. I'll look for it. I bought some millet and polenta. Have tried the millet - its a bit bland but not too bad. Think I just need to experiment with it. I read somewhere that 40% of Celiacs have an intolerance to millet but I didn't have any adverse reaction.
Geez this is a lot of trouble! My biggest problem, as with many of us, is bread. I cannot bake to save my life so unless I have a recipe to follow, I'm useless. I need to find one with a mixture of flours other than rice. I believe you can use millet but I wouldn't know what else to put in!

Yvonne,
I would check out some of Bette Hagman's more recent cookbooks. She's known as the "Gluten-Free Gourmet" and some of her more recent books, including "The Gluten-Free Gourmet Cooks Fast and Healthy" and "The Gluten-Free Gourmet Cooks Comfort Foods", have a lot of recipes for bread and just about anything else that do not include rice. She specifically mentions that she has a growing reader response from people who are celiacs and also rice-intolerant. Hope this helps!

Annie,
Thanks so much for the advice. I will definitely try and get one of her books although its really difficult to get a lot of the books mentioned on these sites here in South Africa. Can't wait to go home to the UK one of these days so I don't have these problems!!
Maybe I can order them on the internet from overseas? Not sure how to go about this but I will try. |

Dear Ivonne,
Here is a link from the CSA that list a whole bunch of grains that are GF. Going through them might give you a better idea of what grains are available in your country. You will be amazed at how many grain and beans make good enough GF flours!

Best list I've seen so far. Thanks so much!
Finally bought myself a bread machine - going to try it out on the weekend. Ridiculous but I'm quite excited about it! Sad!
