GF Buckwheat Pancakes
dry:
1 cup Buckwheat flour
1 cup Rice flour. You could use GF flour mix if you have some whipped up. See below
1/2 teaspn salt
1-2 teaspns xanthan gum
1 tblespn baking powder (Calumet brand)
wet:
2 eggs beaten
2 tablespns brown sugar, or honey
1/4 cup oil, canola or light olive oil
2 cups milk or non-dairy milk (Rice, soy, nut milk)
Whisk together the dry ingreds in a large bowl.
Whisk the wet ingreds into another bowl.
Combine the wet & dry ingreds - mix well
If the batter is too thick - add a bit more milk/milk sub to thin it.
Fire up your griddle or skillet to med. heat. You can use a light spay oil or GF nonstick spray if needed.
Pour out enough batter to make a cake. Flip when edges become slightly brown.
Top with your favorite pancake fixins!
Makes enough for 3-4 people.
*GF flour mix 1: 3 cups rice flour, 3 cups tapioca flour, 3 cups cornstarch, 3 tbs potato flour (not potato starch!)
GF flour mix 2: Two part white rice flour, Two thirds part potato starch flour, One third part tapioca starch _________________ Al

Al, I saw buckwheat this morning and it all said gluten free! I don't understand my list, but as I said its a pretty old one. Thanks for sharing your recipe. _________________ Judy

Dear Al,
Previously I had used my own GF mix -similar to yours but including soy and amaranth flour- to make pancankes and they came back "okay." Nevertheless, last time I used buckwheat just to try it, and the mix came out so gummy and sticky and it wouldn´t cook that I had to throw it away! (definitely a blob in all its meanings) That is the only different ingredient I used and I am wondering if maybe I used too much or too little? Oh, wait! I also never added xanthan gum before and last time I did, but then again you do mention it in your recipe... I´m confused

Hi Iris,
I'm sorry to hear that it didn't turn out I'm not sure what to say...did you use this recipe? I have not personally used this, but I know others that have and have raved about it. I asked Peg (my wife and the baker of the family ) about the xanthan gum - she said she has never seen it change the consistancy of uncooked batter after adding it. If I remember correctly, if you add to much xanthan gum it will make the finished product run and spread out.
Adding more milk didn't thin it out?
Peg will usually make pancakes with Pamela's Ultimate Baking & Pancake Mix as a base and add 2 or 3 tablespoons of buckwheat flour. Would this is available down by you? |

Yes Al, I guessed who you were hahaha!
I don´t have any leftover mixes anymore. All the mixes (including buckwheat flour and almond flour) I´ve ever tried, were gifts brought by friends and family in the US. And actually the best pancake mix I´ve tried it was Pamela´s... Yes, I added some milk but it just made it stickier,
It might´ve been the xantham gum then. I have access to rice flour, tapioca flour, potato starch and flour, soy flour, amaranth, corn starch of course and I´ve always used this mix for cookies, muffins and pancakes. One day, when I can afford to throw away some food if it doesn´t come out right , I will give it another go with your exact recipe.
