I think I have gotten a hold of some gluten. I hosted a dinner party Saturday night and Sunday I was very sick with GI issues. It is Monday and I feel very wiped out. I used a gluten free lasagna recipe that I found on the recipe site. I used laura's ground beef, tinkyada lasagna noodles, onion, garlic, Contadina tomatoes & paste, spice island oregano, basil, Kraft Parmesan cheese, Sorrento ricotta cheese, Kraft mozzarella cheese. I also served a mixed lettuce salad. The brand of lettuce was Taylor's bagged lettuce and I used grape tomatoes, carrotts and bell pepper. I served a gluten free dessert that I found on the celiac forum recipe site that consisted of strawberries, cool whip, gluten free animal crackers and Hershey's chocolate syrup. I also served a gluten free pantry vanilla cake that I poked holes in and mixed together carnation condensed milk and coconut cream and poured that over it. I topped it with Dole crushed pineapple and Baker's coconut. What do you see on this list that I might have gotten in to? I did serve Texas garlic toast to everyone but me but I wore plastic gloves and lined my cookie sheet with tin foil. I am very careful with clean up and used a scrubby brush to the clean dishes with before putting in the washer. I had severe GI cramps and diarrhea yesterday and felt very tired. Today, I do not have the pain but am exhausted and still some diarrhea. I get so frustrated sometimes when I do try to be so careful. I also have microscopic colitis and diabetes that adds to the mix. I almost feel that it might have been the colitis bothering me more that the celiac disease. Maybe it was the acid in the tomatoes that bothered me so bad. I did call Kraft and Sorrento to make sure there was no hidden gluten and they said that their products contained no gluten. I think that I will give myself a hug! I need the encouragement today. Thanks for any suggestions and help!  |

Hi, M. Sorry you are feeling unwell. All of the brand names you mentioned should be safe. I have used all of them myself. It could be possible that you got CC from the texas toast, or that your symptoms are unrealted to gluten. Sounds like a pretty rich meal, though. Lots of cheese and delicious fat grams. Maybe that is what set you off. I know I can't eat too much rich stuff or I start to feel poorly.

Sorry to hear that you are feeling badly. It is also possible that this is totally unrelated to gluten.
My MIL works at a medical clinic and she said that about 1 out of every 4 that came in yesterday left with FLU as the diagnosis.
I hope that it is just the 'rich food' and not a virus that you have. _________________

I'm with MrsP on this one: could it be the flu? Even a minor flu? I just got over one of those last week, and if it wasn't for the fever I'd swear it was gluten related. _________________ Ostrich :>--O==={
