I was thinking it might be a good idea to have a GF Baking Boot Camp. GF Baking is harder than GF Cooking. It takes experience to know what works and what doesn't - something that a newbie might benefit from. We have a lot of GF Baking knowledge here [no thanks to me ], it might be nice to assemble it in an orderly fashion. I know it exists in bits and pieces.
Brainstorming:
We could have a list of flours & their properties.
How & why to combine flours.
Tips on converting existing NGF recipes.
Does this sound like something we should work on? As I said, this not something I'd be able to do by myself [I haven't figured out how to run a measuring cup]. At the very least, I'd have to extract the knowledge from Peg. _________________ Al

I think it a great idea, but the next couple of weeks are bad for me. I just don't have the time or the energy to sit down and put my baking thoughts on paper right now. I don't even know how to compile my thoughts for gluten free baking...

ditto in this corner. With my cousin coming to visit this week, I don't have alot of time on my hands. I DO love baking though- and this could be a fun project.
I know MrsP is kinda' awol. She said her son is getting married this saturday- and she hasn't had as much time to check in as she usually does- but this sounds right up her alley. LOL!
(I love signing people up against their will or knowledge! ROFL! J/K.
I would love for us to be able to do this.  |

Yeah... I'm kinda outta commission[or should be] too. I just wanted to float the balloon and see which way it went. Maybe in sometime in August or Sept??
In the mean time, if you think of an idea, throw it out here.

Oh that sounds like such a wonderful idea!
I know how to cook GF, but I haven't got the baking thing totally together yet. I know a few recipes, but nothing that I have come up with completely on my own.
I have been trying to get in to more baking lately, which incidentally is how I actually came across this site

Al, I would love to help you anyway that I can with this idea! This is what I try to do with my group meetings. I remember too well how helpless I felt trying to learn all of this without any help from any 'person' in the area.
This is going to have to be in a couple of weeks. The wedding is this weekend and my mother is going to stay with me the week after.
Please send me some PM's on how I can help and I will try to pull from my charts and recipes what you need.

I would like this also as I have noticed a few quirks about GF baking. I've had some misses but as I love to cook, I was able to remedy them....after losing some expensive ingredients!  |

This is an awesome idea! I've been cooking GF for my daughter for nearly two years now, but haven't even attempted baking. I'd always heard how difficult it was and was too chicken to even try. The 'definitions' of flours and how to use them would be most beneficial -- which work best for cookies vs cakes, etc.
Fall would be a great time to do it... when the heat wave will hopefully be over and we can actually turn the oven back on! _________________ Kim --

This is a great idea, Al!
I make pizza crusts and crackers, but baking bread intimidates me. I would like to try it. Kimmus is right about closer to fall would be good. It is so hot that we've just been grilling dinner everyday. _________________ Wheat-free and egg-free since 10/1999.

As a newbie I would like to say yes please! I would help if I knew anything! I can taste test and let you all know????
My other daughter, 13 years old, is my biggest help when it comes to baking. SHe has made mm cookies GF, pretzels, pancakes and brownies. She uses all GF stuff and makes them taste so yummy! This would be such a help to us! Sign us up to help if us newbies can.
