MrsP's Banana Bread


1/3 cup Olive Oil
2/3 cup Brown Sugar packed
2 large Eggs
1 tsp. Vanilla
1-3/4 cups GF All Purpose Flour mix
2 tsp. Baking Powder
1-1/4 tsp. Cinnamon
1 tsp. Xanthan Gum
1 Tbs Dough Enhancer (this is optional)**
1/2 tsp. Salt
1/2 cup Pecans or Walnuts, chopped
1-1/2 cups Banana, mashed



Preheat oven to 350°F. Grease 9x5-inch non-stick loaf pan. Cream together oil, sugar, eggs, and vanilla in large bowl with eletric mixer. Add flour, xanthan gum, salt, baking powder and cinnamon to egg mixture, alternating with bananas. Beat until smooth. Stir in nuts and raisins. Batter will be somewhat soft. Transfer to pan. Bake for 1 hour.

Serves 10.

** Dough Enhancer is a soy lecithin product. It helps to prolong the shelf life. You will have a fine product without this ingredient if you do not normally use this item.

MrsP - I HATE banana bread - always have! But I made this bread 2 days ago and I cannot believe how GOOD it is!!! I made a double batch and ended up with 3 gorgeous loaves.

Then I got to thinking, since I have no more bananas, what else can I mash up and use for a quick bread using the same base recipe? So I mashed sweet potatoes, added some water to make them the general consistency as the bananas and I'm headed in to the kitchen to try out my idea. Maybe I'll try applesauce another time. I used to make applesauce bread in my pre-GF days and it was SOOOOO yummy!

Also, I was not sure what GF flour mix you used, so I used the brown rice flour mix. Today I'm going to try the featherlight mix.

I am glad that you like the loaf. Very Happy


Embarassed I use the sweet rice flour, potato starch and tapioca starch blended flour mix. (3/2/1)

I never thought of using sweet taters. LOL I do use a 15 oz. can of pumpkin in the place of the bananas.

I have also subbed grated carrots or zuchinni in this loaf. We really love this recipe in our family.

It is one of my pre-gf-recipes that I converted.

the sweet taters worked great. i doubled the cinnamon, added nutmeg, black walnuts, english walnuts, and zante currants (which i soaked in water for an hour). three beautiful loaves!

guess what's for breakfast tomorrow? Wink

my flour mix is rice flour, potato starch and tapioca starch blended flour mix. (3/2/1) will that type of flour mix work for the banana bread

Yes that is the mix that I use. (I have since switched to using sweet rice flour for the rice flour part, but I used to use the regular rice flour and it was fine.)
